Creamed Corn As A Cheese Sub.

I know I have mentioned this before but I thought I would bring it up again.  I once wound up with too many cans of creamed corn.  Can't even remember how that came about.  So I started putting a layer of creamed corn in casseroles and things.  And oddly enough, it worked very well as a cheese sub for many things.  Enchilada casserole for instance.  Since there is already corn in there, the flavor matches.  But the yellowness and the creaminess of it seems to make up for the lack of cheese.  For those of us who can't eat cheese that is.
