New to gluten free diet still getting sick?????

I'm still kind of new to this whole eliminating gluten from my diet thing. Lately I have been eating things labeled gluten-free but then getting sick from them when I look at the label all of them have had modified food starch. I'm wondering if those things are still gluten free then help I don't know what to do I'm tired of getting hives and being swollen, itchy, sick in the stomach bloated and just miserable. So are those products with gluten free labels and modified starch accurate then? Are they still gluten free?
