Alright, Christmas, I am ready:

Today I made:

gingerbread muffins

sugar cookies

gingerbread men

amaranth cookies

quinoa crispies


and my first bread machine bread that was not 1/2 size with a gooey centre.

all casein and gluten free!

Yummmy!! Would you mind posting the recipe for the gingerbread men?

Sure! I used the recipe from http://www.gfutah.org/recipes/Gingerbread_People.html. I copied and pasted it below, but I'll write what I changed in brackets:

1/2 cup shortening (I used Soy Garden or Earth Balance (I have both, so I am not sure which one)

1/2 cup sugar (I used a scant 1/8 cup of Sucanat)

1/2 cup molasses

1 egg

1 Tbsp vinegar

3 cups Bean Flour Blend (I used a cup of fava, a cup of tapioca and a cup of cornstarch)

1 1/2 tsp xanthan

1 tsp baking powder

1/2 tsp baking soda

1 tsp ground ginger (I probably doubled or tripled this)

1/2 tsp cinnamon (doubled or tripled)

1/2 tsp cloves (doubled or tripled)

Cream sugar and shortening together in mixer till light and fluffy. Mix in molasses, egg, and vinegar until combined.

In a medium bowl, combine Bean Flour Blend, xanthan, baking powder, baking soda, ginger, cinnamon, and cloves. Mix in with wet ingredients.

Cover and chill dough about 3 hours or until easy to handle.

Grease cookie sheet; set aside. On a lightly floured surface, roll half the dough to 1/8" thickness. Cut in to shapes and place on cookie sheet.

Bake at 375F for 5 to 6 minutes or until edges are lightly browned. Cool for 1 minute before removing from pan.

      Celiac Emotional Healing Support Group
      Again you are invited to join Johnny Patout, LCSW for Baton Rouge's first emotional healing support group meeting to assist those living with celiac disease manage the emotional challenges so many of us face. Most often the emotional disturbances include depression, disinterest in normal activities, insomnia, grief, mood changes, anxiety, inability to concentrate, extreme concern about managing a gluten-free lifestyle and other emotional and behavioral challenges.
      The professionals at Jamestown Avenue Counseling Center created the emotional healing support group to give us a safe place to begin to process our emotions and support each other as we heal emotionally while managing celiac disease and the resulting autoimmune disorders.
      The emotional healing support group meets every Thursday, 6:00-7:00pm, at the Jamestown Avenue Counseling Center of Baton Rouge. Jamestown Avenue Counseling Center is located at 4637 Jamestown Avenue, Baton Rouge, Suite B-1. Suite B-1 is upstairs.
