I have followed a gluten-free-diet for about 10 days now, since I had a blood test that showed high glycogen content. Have an appt with a GI dr. in a few weeks. I am totally new to this, and am wondering, other than the obvious items shown on an ingredient list, what are considered "hidden" gluten foods?

Any helpers?

There is a safe foods list on this website. Go to home and scroll to the bottom. You will see a link labeled safe & forbidden foods. This will give you some idea of the names gluten can go by.

I think the biggest hidden issues are things like natural flavoring. You can't know if that has gluten, so you have to ask the company. Same thing with modified food starch. You will find that some companies won't hide gluten under the label of "modified food starch," and you may feel better reading that company's labels and knowing that the product is safe. Kraft is a company that doesn't usually hide gluten.

The other issue is whether things are made on dedicated lines. If the company makes a product with gluten and then makes a gluten free product, there may be gluten residue on the machinery. If you ask the company, they usually will tell you if they make the product on dedicated lines.

If you search this message board for foods & brands you use, you will probably find lists of safe products. The biggest thing is to always check the labels. Ingredients can change. People posting may not be correct. Good thing for the internet and email. I don't know how people figured this out before.

      Vitamin A is important for vision health. But be careful in supplementing it as it can lead to toxicity. Research it and consult with your medical professional. I do not have a definite answer to your original question but I was pursuing the possible cause of nutritional deficiency. But your visual deterioration could be unrelated to your celiac disease so don't rule that out.

      Currently 19. Doctors think I was 1 year old when celiac started, but I wasn't diagnosed until 18, because they didn't do lab work on minors. I've been on a strict gluten-free diet for 14 months now. For example only certified gluten-free nuts and I've researched best brands a lot. I take B vitamins, vitamin D, vitamin C, Curcumin with black pepper, black sesame and green tea extract, magnesium, iron, and a little selenium and zinc, beef liver capsules. I recently had my vitamin and mineral levels retested and D is the only one I don't have enough of now. I had my eyes tested at 17 and they were good back then.

      Not everyone with dermatitis herpetiformis needs to avoid iodine. DH is caused by gluten exposure, but iodine can worsen or trigger flares in a subset of people, especially when the rash is active or not yet controlled by a strict gluten-free diet. Some people react to iodized salt, seaweed, shellfish, or iodine supplements, while others tolerate normal dietary iodine without problems. In most cases, iodine restriction is individualized and often temporary, not a lifelong rule for everyone.
