Does anyone know anyone who knows how to bake professionally? I'm starting a gluten-free bakery in Los Angeles, but while I have some experience baking for family and friends, I am not a pastry chef. More of a marketing & sales person, actually.

Perhaps a baker who had to give it all up when diagnosed with celiac disease, or something else?

The bakery will be totally wheat free / gluten free / dairy free but I want to also include options for egg free, soy free, corn free, etc. Peanut free, yes, but I do use a lot of tree nuts and nut flours.

Oh, and we're doing wholesale only, at least in the beginning.

:( wish i lived down there unfortunaly im in oregon, i do know how to bake lots of diffrent breads ( acually the only thing i know how to make is bread realated things) and im on this board so obviusly i have a gluten problem. Wish i lived down there i would love to work for you. Oh well i am acually thinking about opening my own baker down here after i get going to college and get a business dagree. this part of oregon has nothing when it comes to eating gluten free

You should do it, Lister! You have no idea how fun it is to throw huge batches of dough together, and then later how satisfying it is to hear people moan while eating it. [Not that I'm such a good baker, but gluten-free people get fresh-baked things so rarely that anything fresh, and honestly put together from real ingredients, gets that reaction.]

But maybe come down here instead... you're good at bread; I find gluten-free cakes and cookies and pie crusts way easier than bread -- I could use a good breadmaker. java script:emoticon('B)',%20'smid_15') See that guy? That's you, in your shades, in sunny So. Cal. AFTER you go to college, though.

I did reach out to two major hospitals and currently waiting on approval for one of them in Infectious Diseases to call me.       Dang. I had a moment of hope that I could change my BP med and get off the gluten-free diet. Nope. More seriously, I hadn't seen this articles about this phenomenon before. This is one of the possible answers for people who post here about having celiac symptoms (including biopsy) but normal IgA levels, especially if they are saying that diet isn't helping...

      oops. I didn't see that before posting or I would have at least referenced it. The two recipes are pretty similar, but I think the newer one is a little simpler/faster. Next time though I will search more before posting.

Neither did surgeon)in 2006 and there was a leak 2023 during the same time I was dealing with covid, digestive issues, eyes and skin.Considering I " should  be fine" not consuming gluten/wheat, taking vitamins for sibo and STILL feeling terrible.It has to be parasites. I also take individual eye drops prescribed, could there be an issue there? Anyways my pcp thinks I need therapy because again they don't acknowledge my digestive issues because in my records it shows im fine, hintz the reason I had to go back to bay area hospital:(  I thought skin issues maybe sibo related but I feel and have seen and seriously trying not to think about it because it's disgusting.

      This may not be the cause, it's pure speculation on my part, but for 10-15 years I had a tingling/burning/electric-like shock sensation that emanated from my right-neck upward across the right-side of my head. I was worried about having a stroke or something so got all sorts of tests done, including an MRI, which found not much--only a minor degenerative disk in my neck--which I just accepted as the cause. Fast forward to when I was ~45 and I was hit with shingles in the EXACT place that this sensation would travel--I ended up with a very painful case of shingles that felt like the right-side of my head had been set on fire, and had the blistering and pain that ran along the exact path of nerves that I had felt this sensation travel along for the prior 10-15 years. For me, that time period was a shingles pre-cursor, and all those feelings were likely inflammation in my nerves. Needless to say I've not had this since getting my shingles vaccines at 50.  Your situation could very well be something else, but I just wanted to mention this possibility because your symptoms sound similar to what I experienced. I'm not sure if you're in the age range to get a shingles vaccine, but it may be something to consider.
