Newbie Needs Help Deciphering Ingredients!

Hi, all! I'm brand new to all of this and am about to pull my hair out trying to decipher shampoo ingredients. Conflicting posts about Garnier Fructis products and Oil of Olay moisturizers. I've seen the list that Garnier sent out about wheat containing ingredients and other posts that list common cosmetics ingredients. Here's where I'm confused....all these chemical sounding names like stearamidopropyl dimethylamine, amodimethicone, methyparaben, trideceth-12, etc., etc. How on earth am I supposed to know if these are derived from wheat (or rye, barley or oats)???? Please help!!! My hair is fried and I must find a gluten free friendly shampoo!!!! Thanks in advance for whatever advice you have to offer!
