Gluten-free Yellow Birthday Cake Recipe?

This is my first birthday being gluten-free so I've never had to make a gluten-free cake before! Does anyone have any good recipes or mixes for birthday cakes (preferably yellow/vanilla) that they've tried and would recommend? thanks!

Allrecipes.com has a WONDERFUL yellow cake recipe (gluten free), just go to the site and do a search for gluten free cake.

My family tradition is to have either a sponge cake or a chiffon cake for birthdays. I find that both of these standard recipes convert well, and sponge and chiffon recipes are available in most standard cook books. I use an equal parts mixture of Bob's Red Mill Soy flour, sweet rice flour and tapioca starch to replace the flour. e.g. if the recipe calls for 1 c. of regular flour, measure 1/3 c of each of the gluten-free replacements. Blend the flours well with a whisk, or sift them a couple times. Even though I am the only one gluten-free in my house, I usually make gluten-free cake for all birthdays (if I'm baking it, I'm eating it :P ), and the kids never complain about these recipes.

This thread is perfect for me too as I just made yellow cupcakes for this weekend for a birthday party we were going to. I used Annalise Robert's recipe. It tasted good, but was very crumbly. We couldn't even put frosting on them.

Any ideas why this could be?

Nikki, did you use xantham gum? Many gluten free recipes turn out crumbly due to the lack of gluten. Try the recipe on allrecipes.com. It uses mayo as the fat which helps to hold it together really well. Mine weren't crumbly at all and no one could even tell that they were gluten free.

Thanks for the input- I think I'm gonna try the allrecipes.com one this weekend! it looks really good. :)

My mom actually made a cake for me before I told her about this thread. She made it from Pamela's Baking mix and it was really good! A little dense, but my friend (who doesn't have celiac) said she thought it tasted like a normal cake! So I reccomend pamela's if anyone else is looking for a recipe, but I'll be trying the allrecipes one this weekend so I'll let you know how it turns out.

Also- does anyone know if there are any commercial frosting brands that are safe? I checked the ingrediants of some I saw, but a couple of the ingrediants were questionable so my mom ended up having to make some from scratch. Thanks again!

      Definitely worth speaking to your gastroenterologist about this. My own told me that by using Gaviscon a barrier forms over the contents of the stomach and stops gas and acid irritating the throat.  In fact, he said to me that because I found relief using Gaviscon that was a very clear indicator that reflux was the cause of that particular issue.   A wedge pillow will really help with this - or raising the top bed legs with bricks.

      I did get the pneumonia vaccine about 4 years ago. I had this amazing allergist who did all those vitamin deficiencies test and told to get that vaccine. Unfortunately she retired.  I haven’t been to an allergist in a few years,  I’m not sure what my levels are now. I did have a pulmonologist who wasn’t concern and said I seemed fine to him that I was young etc. But yes I think I should at the very least get a different opinion. Thank you for your reply

      Yes I do have acid reflux. I’m not on anything for it at the moment. I sometimes wonder if that’s what it could be because I get heart burn every night. I may revisit my gastrointestinal doctor again. Thanks for the reply

      Hi @HelloFlowersGoodbyeFlour I wonder if you suffer from reflux, as if you do, you may find it could also be irritating your airways.  I shall explain: I have to use a blue inhaler from time to time, and it seems to be related to reflux.  Never had any trouble before my coeliac diagnosis, the reflux seemed to be something that developed following a holiday to France in 2019, where I had been exposed to gluten.    The reflux continued into the autumn and winter, my throat itched to begin with, particularly after meals, but it then that feeling of irritation seemed to spread to my lungs.  I even found it difficult to breathe on occasion. What stopped it in its tracks was using a wedge pillow at night, following a reflux diet (you can find them online), not eating 2-4 hours before bed and also having a dose of Gaviscon Advanced at night, which forms a barrier so that acid/food can't go back up your esophagus.  The throat irritation faded, and then I found it easier to breathe again. Just mentioning in case it could be a contributing factor.

      Since initially getting your D checked a few years ago, has it since rebounded to normal levels? Sounds like at some point you got it checked again.
