Fat Digestion Issues, Still..

Has anyone who's had problems with poor fat digestion prior to going gluten-free find that initially after switching to a gluten free diet, it is much easier on your gut to eat very minimal amounts of fat for a certain period of time? I am still having a lot of problems with fat digestion- bloating, some gas, occasional fatigue, etc. I've cut out all allergens, all grains. This happens even when eating a salad consisting of ONLY: kale, spinach, cucumber, 3 olives and/or sprinkle of raw pumpkin seeds, lemon juice, and coconut aminos (gluten-free/soy-free, soy sauce alternative). I've been gluten free and eating a high-raw diet for almost 2 weeks.
