    Celiac.com 10/11/2019 - Most people already know that sprouted grains are healthier than their non-sprouted versions, mainly due to the enzyme activity which breaks down the starches and makes them easier for you to digest. However, finding a gluten-free sprouted grain bread has never been easy—at least not until now.

    Little Northern Bakehouse makes two outstanding gluten-free, sprouted breads: Sprouted Honey Oat Bread, and their 7 Grain Bread.

    You may recall our review of their hot dog and hamburger buns in which we were blown away by their taste and texture. Amazingly Little Northern Bakehouse has managed to blow us away again with these two sandwich breads. Their quality, taste, texture, and "mouthfeel" are simply incredible, and second to none!

    On top of their perfect taste and texture, neither of gluten-free sandwich breads will fall apart. We made some of the best panini sandwiches that I've had since going gluten-free, and the bread did not crack, crumble, or leave crumbs on our plates.

    Both breads are also a healthy choice, and one serving (two slices) of each contains 3-4 grams of your daily fiber. These breads really are "the greatest thing since sliced bread!"

    Celiac.com 10/05/2012 - Buckwheat flour significantly improves the nutrition and texture in gluten-free breads, according to a new study published in the journal Food Hydrocolloids. The study examines the role of buckwheat and hydroxypropyl methylcellulose (HPMC) in making gluten-free breads.
    The researchers point out that the food industry has cleared numerous formulation hurdles associated with removing gluten from dough, and created numerous new gluten-free products. However, they add, many gluten-free breads are still made with pure starches, "resulting in low technological and nutritional quality."

    Can New Food Technology Give Us Better Celiac-Safe Breads?
    Celiac.com 06/12/2019 - A team of researchers recently sat out to assess a new technology for reducing wheat flour toxicity for celiac disease patients using the in situ formation of gluten-chitosan interlocked self-assembled supramolecular architecture. 
    The research team included Miguel Ribeiro, Stefania Picascia, Larbi Rhazi, Carmen Gianfrani, Jose Maria Carrillo, Marta Rodriguez-Quijano, Gérard Branlard, and Fernando M. Nunesa.
    The team found that an interlocked supramolecular architecture forms between gluten and chitosan, which makes for the formation of favorable dough. Rheological properties of dough depend on the protein to chitosan ratio. Dough with a 1.9:1 protein to chitosan ratio showed the best rheological properties.

    Celiac.com 06/20/2019 - It's now officially grilling season and I'm always on the lookout for better versions of gluten-free hamburger and hot dog buns. 
    My big discovery this season comes to us courtesy of Little Northern Bakehouse, which is a Canadian bakery located in British Columbia. All of their gluten-free products are made in a 100% gluten-free facility. 
    Little Northern Bakehouse's hot dog and hamburger buns are simply amazing. The first thing I noticed about them was their spongy texture, and the fact that, despite creating an over-stuffed cheeseburger with all the fixings, my bun did not fall apart!
