    Pineapple Cake (Gluten-Free)

    Preheat oven to 375--use 9 cake pan or 10 cast iron skillet

    3 tablespoons sugar
    2 tablespoons butter
    1 fresh pineapple
    6 prunes, cooked & pitted
    3 eggs
    2 cups sugar
    1 cup milk
    1 ½ cups cornstarch
    1 teaspoon baking powder

    Melt 3 T sugar & 1T butter in baking pan & stir until golden brown, coating sides & bottom of pan. Slice and core pineapple. Cook in small amount of water for about 15 min (or use canned pineapple). Arrange slices in bottom of pan, placing prune in center of each slice.

    Beat egg yolks until thick, add 1 cup sugar, milk and cornstarch sifted with baking powder. Fold in stiffly beaten egg whites. Pour into pan over the pineapple and bake about 45 min . Let cool 10 min and unfold onto plate. Pour over the following syrup: if using fresh pineapple, put peel in heavy saucepan (if using canned, use syrup), add 1 cup sugar & remaining 1 Tablespoon butter. cook until thick (should be about 1 ½ cups).

    1 cup sliced or slivered almonds, toasted
    1 tablespoon + 1 cup sugar, divided
    ¾ cup(1-½ sticks) butter
    ½ cup cocoa
    5 eggs, separated
    1/8 teaspoon salt

    Honey preheat oven 375F
    Place toasted almonds and l T sugar in the bowl of food processor. Process to a fine grind and set aside. Melt the butter, stir in the cocoa and cool.

    1 cup soy flour
    ¾ cup 100% corn flour (cornstarch)
    1 ¼ teaspoon baking soda
    ½ cup cocoa
    1 ¼ cups caster sugar (extra fine sugar, but I used regular granulated)
    150g melted butter (1 1/3 sticks or 2/3 cups)
    1 tablespoon gluten-free white vinegar
    1 cup evaporated milk
    2 eggs
    1 mashed banana
    2 tablespoons raspberry jam
    Grease two 8 round sandwich cake pans....line bases with baking paper. Sift flours, soda, cocoa and sugar into a large bowl and add butter, vinegar and milk. Beat with electric beater on low speed 1 minute, add eggs, banana and jam and beat on medium speed for two minutes. Pour cake mix into prepared pans.     This recipe comes to us from Dave Ross. Gluten-Free Flour Blend Ingredients:
    25% Asian white rice flour;
    25% Asian sweet rice flour;
    25% tapioca starch; and
    25% potato starch.
    I use no Xanthan gum in these recipes. I buy a 12 oz. bag of each at an Asian store and mix them into a glass container for general use.
    Gluten-Free Cake Ingredients:
    ¾ cup or 1 and ½ sticks butter melted
    ¾ cup cocoa powder
    2 ¼ cup sugar

    Traditional Carrot Cake (Gluten-Free)
    The following gluten-free carrot cake recipe is truly a traditional cake. Full of some of the most common allergens like, dairy, eggs and nuts. I tend  to experiment  with new recipes by replacing ingredients I can't tolerate, with ingredients I can. For example, many recipes allow you to substitute eggs with applesauce. The nuts can be left out-for those allergic to nuts, and the cream cheese can be substituted for dairy-free cream cheese. When substituting however, ratios will be different and it is a good idea to know what ratio of applesauce (for example) equals 4 eggs. Ratio quantities will also greatly depend on your taste buds, but if this recipe is okay for your diet, dig in and enjoy!
