Biscuits

Does anyone have a recipe for or know of a mix that is not sickly sweet? Daughter also can not have soy, dairy or eggs.

So far all of the ones I've tried have an odd, sweet taste to them, kind of like shortbread. Or they just won't hold together. I used one mix for drop biscuits and they just went to crumbs when I tried to get them off the cookie sheet. Odd mouthfeel to them too. Gritty and sort of just exploded in the mouth.

Daughter used to love a casserole I made that was a chicken and vegetable stew topped with biscuits. Would like to make something similar but so far no luck.

I use this recipe for biscuit topping and for chicken and dumplings.

2 C Gluten Free flour mix *(see below)

1 Tbs Baking Powder

1-1/2 tsp salt

1/3 C Spectrum Organic Shortening

3/4-1 C Rice milk

Stir baking powder and salt into flour. Cut shortening in with a pastry blender until very well mixed (no big lumps left). Stir in milk with a spoon and stir until smooth. If you're going to roll them out, use 3/4 C milk (maybe a bit more). If you're going to make drop biscuits, use 1 C milk.

For plain biscuits, bake at 400 for 10 minutes.

*Gluten Free Flour Mix

3 C Brown Rice Flour (or combo of rice and sorghum)

1 C Potato Starch

1/2 C Tapioca Starch

2-1/2 tsp. xanthan gum

Sift together 3 times! (Very important.)

Thanks! I will try that one.

There are some really good recipes here: Gluten Free Alchemist The woman that runs it is UK based, and has a daughter with coeliac disease. I think she might be a food scientist as she is extremely knowledgeable about the properties of different starches and flours etc. Coeliac UK have a lot of UK relevant information regarding coeliac disease, and also have a recipes section: Coeliac UK Find Me Gluten Free is a good resource to find gluten free places to eat out. You can use the website or download their app. Paying for the premium services gives more advanced searches: https://www.findmeglutenfree.com/

In the Europe the new protocol for making a celiac disease diagnosis in children is if their tTg-IgA (tissue transglutaminase IgA) levels are 10 times or above the positive level for celiac disease. According to the latest research, if the blood test results are at certain high levels that range between 5-10 times the reference range for a positive celiac disease diagnosis, it may not be necessary to confirm the results using an endoscopy/biopsy: Blood Test Alone Can Diagnose Celiac Disease in Most Children and Adults TGA-IgA at or Above Five Times Normal Limit in Kids Indicates Celiac Disease in Nearly All Cases No More Biopsies to Diagnose Celiac Disease in Children! There are other things that may cause elevated tTg-IgA levels, but in general a reaction to gluten is the culprit:

Lot's of sugar can throw you gut microbiome off balance, and I'm not sure how that plays into DH, but it's certainly known that sugar can cause an unhealthy gut flora balance.
