Citrus Chicken

I just came accross this I have not tried it yet...:)

Citrus Chicken

Serve over sticky rice or gluten free pasta

1 whole chicken, split

1/2 cup water

1/4 cup silvered almonds

2 tb butter or margarine (or substitute for dietary needs)

1/2 ts grated orange peel

1/4 ts grated lemon peel

1/2-3/4 cup sour cream (or substitute for dietary needs)

1/2 ts salt

1/8 ts white pepper

Place chicken in a 2 qt pot, add water and bring to a boil. Reduce heat, cover and simmer until chicken is tender, about 20 minutes.

Strain broth and reserve.

When chicken is cool enough to handle, remove skin and bones and discard. Cut chicken into 1 inch chunks.

Lightly brown almonds in 1 tb of the butter or margarine. Set aside. Return boned chicken into a pan with remaining butter or margarine, orange peel, lemon peel, sour cream, salt, pepper and 1/4 cup of reserved broth. Stir gently and heat through. Do not boil.

Serve with rice or pasta and garnish with toasted slivered almonds.
