Coconut-Almond Cookies

Gluten Free, Soy Free

3/4 cup Sweetened Condensed Milk

1 bag (14-oz.) Shredded Coconut

pinch Kosher Salt

24 whole Almonds

1/2 cup melted 'Enjoy Life' Gluten & Soy free Chocolate Chips

Preheat to 350F.

Stir together all the ingredients, except the melted chocolate and almonds.

Scoop ball shaped spoonfuls onto a parchment lined baking sheet.

Press an almond into the tops of ea. cookie and bake for 15-17 minutes (until cookies begin to turn golden.) Remove and cool on wire racks.

Melt chocolate, then drizzle (using a back & forth motion) over each cookie.

Makes 24:)
