So I've been eating (for the most part) all whole foods and took grains out of my diet..I have them on occasion, but find I'm better without them. I'm gluten/soy/dairy free, minus the tiny bits of soy here and there once and a while that dont seem to bother me... same with dairy...it really depends.....I just dont like the thought of dairy/hormones alltogether, part of the reason I stay away from it other than it bothers me in concentrated forms.

I just really want to make something that TASTES GOOD. I think I'm just sick of the same foods all the time, along with the combination of constantly cooking for myself. I've got to the point where I dont even care about food preparation anymore and will just boil/or bake some plain chicken, eat plain veggies and snack on fruit throughout the day. The thought of sitting down to an actual meal with something differant and with differant flavors makes me drool... Not that I cant cook something up with differant spices, its just lack of motivation to do it....I feel like I'm just eating to survive. I eat very healthy, but eating like a cave man gets to ya....I've also been feeling really tired lately and think its from lack of variety in my diet....I'm just so bored with food!!!! its funny how it takes a year for it to sink in how nice it was to just be able to go out and order something!.....its realY REALLY sinking in now :lol:

So anyone from Buffalo NY area want to have a gluten free cooking party? lol!!!

Have you tried cooked greens? I never ate these until I started meeting with a holistic nutritionist that also has celiac disease. Inow eat collard greens, turnip greens, kale, etc. Do grains bother you? They are very soothing for me. I actually have brown rice with raisins, natural maple syrup, and unsweetened almond milk for breakfast. It is delicious.

This is a lovely treat if you're craving ice cream :P

- One can of full-fat coconut milk

- Frozen fruit (peaches, blueberries, strawberries, mangoes, etc... a fresh banana is nice too, but you need frozen fruit to make it like ice cream)

- A bit of sweetener as desired (maple syrup, stevia, honey)

Blend at low speed until the frozen fruit is all crushed, then give it a whirl at high speed for a smoother texture. You might need to add a bit a liquid if it's too thick (almond milk, rice milk, fruit juice... whatever sounds good to you).

If you drink the whole thing it's about 900 calories ;) Very satisfying.

yes, I love all kinds of greens. especially collard and mustard greens. I'm still not 100% sure about grains. I seem better (digestive wise) off of them, but I lack tons of energy w/o them. Brown rice and quinoa (when I can afford it!) I love. I will have to try the rice with raisins/maple syrup, that sounds REALLY good right now.

I am free of all of those foods you mentioned, and then some! :)

Here are some of my favorite things to eat:

mashed cauliflower--cook a bag of frozen cauliflower, put it in a food processor, puree the heck out of it. I add ghee (since I'm casein- and lactose-free) or earth balance, sea salt, pepper, parsley, chives, garlic powder, and it's SOOOO good, similar to twice-baked mashed potatoes. You could add bacon or cheese (it says you're not totally DF?) or chopped green onions, too.

scrambled eggs--I cook the meat first, either bacon that's been cut up or sausage I've made, then add bell peppers, green onion, then eggs. By cooking it in the pan with the meat, you get a TON of flavor and you don't have to add anything extra to the pan.

taco salad--I'm sort of lazy when it comes to lettuce, so I admit, I'll buy those prepackaged bags! I put part of a bag on a plate, top it with fresh guacamole (mash avocado with chili powder, salt, pepper, garlic), fresh salsa (in a food processor combine tomatoes, onion, garlic, cilantro, jalapenos, sea salt, lime juice) and then either chicken or beef. I cut up chicken breasts into chunks, then cook; if I use beef, I use ground beef. I don't do pre-packaged seasonings, but instead make my own concoction of chili powder, cayenne, chipotle, cumin, garlic, pepper, salt. I add that to the chicken at the beginning and let the flavors cook in.

trail mix--this is a great snack if you can eat nuts and fruit. I could never find any trail mix that hadn't been processed in a wheat facility, so I made my own. I bought a wide variety of stuff; golden raisins, chopped dates, craisins, pumpkin seeds, sunflower seeds, pistachios, almonds, dried unsweetened coconut flakes, chocolate chips, chopped pecans, etc. It's SO MUCH CHEAPER than a pre-made snack bar or pre-packaged trail mix!

I am very glad to hear all of these suggestions. It is such a struggle for me to eat gluten free. I LOVE bread. I can go a few days without eating gluten and then I crave bread, or cookies SO much that I have to eat them. The gluten-free bread just does not cut it for me at all. What can I do to stop these cravings of gluten?

I tried the brown rice, raisins, almonds, maple syrup and skim milk....I LOVE IT! Thanks for sharing that.

My Recipe for Sticky Chicken and Potatoes: (Old Cajun Family Favorite)

Cut and peel three medium potatoes into chunks. Fry in Canola oil until crisp. Remove from oil. Cut about 3-4 lbs of boneless chicken into chunks and fry in the same oil as potatoes. Remove chicken from oil and empty oil (leaving about 2 serving spoons of oil in pot.) Cut and chop 3-4 medium onions and saute in the same pot (this will tend to deglaze pot.) When onions are clear, put chicken back in and add about 1 cup of water. Cover and cook chicken until tender and water is reduced to a gravy. Turn off the fire and put potatoes back into gravy with chicken. Serve over rice.

grains, when cooked thoroughly are very good for the celiac digestion -- but outside or rice and quinoa the other grains are more temperamental and require longer cooking times and usually with added oil, even some require sauteing before boiling.

as for bread, most on the shelf, or *gasp* in the freezer, gluten-free bread is made for a long shelf life and is dry, very dry. If you love bread, try making it a home. With no need to knead and no second rise gluten-free bread making is much easier than 'gluten bread'!

I make sure I treat myself once a week. I either bake something or go out and eat at a gluten free place.

Otherwise I would start feeling deprived then I would be tempted to eat gluten more.

I use almond flour for cooking, it is costly but I buy it in bulk. For breakfast I toss two eggs in a bowel, some Parmesan cheese, almond milk, and sprinkle on some old bay seasoning. then toss it in the microwave. It is fast and fluffy and has kick. I experiment with more spices now. There is a place near me to by them cheap.

I need to try new stuff from time to time, some I toss out, some I change, some I make again.

( baked carrots in the stove with smart balance and curry are awesome, flavor, kick, and crunch.)

      @glucel,  There's a strong correlation between thiamine deficiency, hypoxia, and insomnia.  Thiamine is needed to help red blood cells carry oxygen.  In thiamine deficiency, hypoxia (lack of oxygen in tissues) occurs, and this can result in insomnia. Hypoxia causes systemic inflammation, increases inflammatory markers, and is associated with cardiovascular events.  Curiously, thiamine deficiency is correlated with excessive daytime sleepiness and oversleeping.   I found a combination of Tryptophan, Pyridoxine B 6, magnesium, and L-theanine works very well for inducing sleep.  Sometimes, I add Passion Flower Extract and/or Sweet Melissa.  There's no side effects the next morning with Passion Flower, it just induces sleepiness.  Sweet Melissa is groovy, and has anti-inflammatory effects on the digestive system.   I prefer to take 250 mg Benfotiamine and 100 mg Thiamine TTFD in the mornings and another dose of Benfotiamine at lunch.  I try not to take any thiamine after four p.m. because it keeps my brain so energized and wanting to think... Oh, I do take a combination of another form of thiamine (sulbutiamine), Pyridoxine and Cobalamine for a pain reliever sometimes, but I can sleep after taking that.  But thiamine does help regulate circadian rhythm.   Make sure you're getting Omega Three fats! They'll help you satisfy that late night carb craving with fewer carbs.  Flaxseed oil, olive oil, sunflower seed oil.  Nuts and nut butters, like walnuts and cashews, are good, too, if you can tolerate them.    Try taking the 100mg thiamine HCl before your aerobics and see if there's a difference.  Sweet dreams!       Thanks to everybody for your help. I reread the dr's notes from the biopsy procedure and it seems I had worse than atrofied villi. It was termed flattened mucosa. So while iron ferratin levels are normal my bet is, as kitty alluded to, iron not getting into cells. I have dr appointment next mo but don't hold out a lot of hope, There is strong correlation of low red blood cells and insomnia so at least I finally solved that one after few yrs of being mislead. I intend to take stop taking 100 mg b1 at noon time and start 150 mg benfotiamin. I may or may not add the the 100 mg b1evening meal. BTW, last night had 1/3 lb beef. potato then 2 bowls cereal and an apple later in the eve. I generally do my areobics before supper so maybe that contributes to the hunger.

      I have osteoporosis and have crushed three vertebrae.  I supplement with Lysine, Tryptophan, threonine, calcium, Boron, Vitamins D, A, and K, and the B vitamins (folate, B12, and Thiamine B1 especially for bone health).   I tried Fosomax, but it tore up my insides.  I prefer the supplements.  I feel better and my bones feel stronger.   References: A composite protein enriched with threonine, lysine, and tryptophan improves osteoporosis by modulating the composition and metabolism of the gut microbiota https://pubmed.ncbi.nlm.nih.gov/41915427/

      @Aileen Cregan, I was put on high blood pressure medication, too. But I was able to correct my high blood pressure by supplementing with Thiamine Vitamin B 1.  I am no longer on high blood pressure medication.  I feel much better without the medication. I continue to supplement Thiamine in the form Benfotiamine.   The particular high blood pressure medication I took was Norvasc (amlodipine), which causes thiamine deficiency by blocking thiamine transporters so that thiamine cannot enter cells.  Benfotiamine can get into cells by merging with the cell membrane, thus bypassing nonfunctional thiamine transporters.   Indapamide also blocks thiamine transporters! The use of this type of medications that block thiamine precipitated Wernickes Encephalopathy.  My doctors did not recognize the connection to Thiamine deficiency.  I nearly died.   Talk to your doctor and dietician about supplementing with Benfotiamine, a fat soluble form of thiamine that bypasses thiamine transporters.  Ask for an Erythrocyte Transketolace Activity Assay to check your thiamine levels asap.  Routine blood tests for thiamine are not an accurate measure of  thiamine in the body.   Absorption of essential vitamins like Thiamine is altered in Celiac Disease due to damaged villi, inflammation and dysbiosis.  The Gluten Free diet can be lacking in vitamins and minerals.  Discuss supplementing with all the eight B vitamins,  the four fat soluble vitamins and necessary minerals. Please keep us posted on your progress!
