How Do I Know When Im Glutened?

Honestly I can never tell. Sometimes I get tingling in my legs but that doesnt happen frequently and since i have so many food sensitivities it really could be anything.

Last night I got some sorbet at a gelato place. The owner confirmed the sorbet is gluten free and after i got some tingling in my legs..not sure if it was gluten or something else

Tonight I ate at a Greek place that was listed on a gluten-free site. I told the waitress gluten free and even gave her my allergy card but i dont even know if the chef read it since she returned it seconds later. She was very kind and accommodating, but was my meal really gluten free? I ordered a plain salad, lamb chops and some steamed broccoli. the lamb was broiled and had some kind of crust on it..not like it was breaded but there was something charred and crusty on the top. im assuming it was ok since she told me they can do any meat or fish gluten-free but i forgot to tell her to leave any marinades off. Not sure if there was anything else i coulda done.

eating out has become much easier for me and im defly not as neurotic about ordering gluten-free anymore, but its still a minefield out there and since i dont get severe symptoms from CC i just never really know whats safe or not and i cant very well get an enterolab sool Ab test after every meal.

How do you guys deal with this? specifically those of you who dont get noticeable symptoms after cc'd but do have other food sensitivities ?

Also i have been making a habit of popping GlutenEase prior to meals whenever i eat out. My doc recommended this and it defly hasnt hurt

I had to spend 3 months with eating only food I cooked myself from scratch before I could pinpoint the gluten source. I CCed myself constantly before that without realizing it. Once I was super strict, I could reintroduce things and be able to tell if eating out or grilling or other things caused a reaction. I learned I was more sensitive than I thought and that I wasn't entirely gluten free prior to the 3 months of cooking in a gluten free house all my own food.

Your doctor is an idiot. GlutenEase and all the other DPP-IV products are a complete scam. DPP-IV only removes prolines from the end of peptides, it doesn't cleave ones in the middle like on gliadin peptide.

If you don't react noticeably to gluten, just take reasonable caution and you will be fine.

Well I wouldn't jump the gun and say my doctor is an idiot- he only suggested I take it as a precaution when eating out (for cc) and that I should still do my best to avoid gluten. not like he said i can eat at subway and the pill will digest all the gluten. I do notice some benfit from the enzyme so i will continue to take it as i see fit

By the way read the reviews for this product on i herb and amazon - all positive

hhmmm.. i just looked up that glutenease .. idk.. i DID used to take their DigestGold (with digestive enzymes)...

but ya- i THINK they explain in the fine print- that it helps alleviate symptoms but that it does not protect someone that is celiac.

i THINK it MAY help break it up- so it's easier to digest- however our antibodies will still recognize it, and start going into autoimmune mode. i THINK Papaya Enzyme helps break up Wheat Germ Agglutin... and D-Mannose helps to bind up Gluten... but still-> the best strategy is to AVOID it all together.

i dont have great advice for you- ive only been 100% gluten-free for 10 weeks, and have mostly avoided restaurants cause im just not sure how to be safe with all the stupid sauces,etc. :angry: ive only gone to Pei Wei (gluten-free menu), Chipotle (allergen list), and once ordered super plain sushi & brought gluten-free soy sauce packets with me.

still a little apprehensive.

ps- i cant always tell if ive been glutened, cause i have so many other intolerances

Placebo effect is a lovely thing. There is simply no way DPP-IV can detoxify gliadin for celiac disease. The enzyme does not cleave internal prolines. Period. You are NOT protecting yourself from damage!!!

Never said that it was protecting me from damage and the enzyme does in fact help me with digestion. sorry :(

And again I may not even have celiac - all i know is when i take this before meals in restaurants i always feel fine after and in the past there were times when i felt ill...even at the same restaurants

Well, it's nothing to do with gluten/celiac. Whatever the enzyme is doing, I'm glad it helps you.

      Very good pizzeria with small dining room in back of the restaurant. The owner's daughter has celiac & they have gluten free pizza & a gluten free menu. Some items from the regular menu can be made gluten free also. They have a lunch menu which we ordered from & my chicken with spinach & mozzarella over gluten-free penne was delicious. They also have Tuesday night pasta specials & Thursday night chicken pasta specials. We plan on going back for dinner soon.

      @Aretaeus Cappadocia and @Russ H thank you both for your helpful advice and information. I haven't seen a GI in years. They never helped me aside from my inital diagnosis. All other help has come from my own research, which is why I came here. I will be even more careful in the future.

      @nancydrewandtheceliacclue, you are welcome. After looking at this thread again, I would like to suggest that some of the other comments from @Russ H are worth following up on. The bird-bread may or may not be contributing to what you are experiencing, but it seems unlikely to be the whole story. If you have access to decent healthcare, I would write down your experiences and questions in outline form and bring this to your Dr. I suggest writing it down so you don't get distracted from telling the Dr everything you want to say while you have their attention.

      @Russ H, I partly agree and partly disagree with you. After looking at it again, I would say that the slick graphic I posted overestimates the risk. Your math is solid, although I find estimates of gluten in white bread at 10-12% rather than the 8% you use. Somewhat contradicting what I wrote before, I agree with you that it would be difficult to ingest 10 mg from flinging bread.  However, I would still suggest that @nancydrewandtheceliacclue take precautions against exposure in this activity. I'm not an expert, I could easily be wrong, but if someone is experiencing symptoms and has a known exposure route, it's possible that they are susceptible to less than 10 mg / day, or it is possible that there is/are other undetected sources of exposure that together with this one are causing problems. At any rate, I would want to eliminate any exposure until symptoms are under control before I started testing the safety of potentially risky activities.       @Aretaeus Cappadocia thank you for your reply and the link, that is very helpful to get a visual of just how small of an amount can cause a reaction. I know I am not consuming gluten or coming into contact with gluten from any other source. I will stop touching/tossing bread outside! My diet has not changed, and I do not have reactions to the things I am currently eating, which are few in number. My auto immune reaction just seems so severe. The abdominal pain is extreme. It takes a lot out of me. I guess I will be this way for the rest of my life if I ever happen to come into contact with gluten? I appreciate the help.
