I have some of the linguini in the pantry and i'd thought it would make a good lunch. As of right now my only idea is to use some olive oil and a little parmasan cheese plus spinage (if i have any in the fridge).

Can't have tomatos, so thats out. Not in the mood for alfredo... so yeah any ideas?

Add a touch of salt and lemon and butter, wilt the spinach and toss with the quinoa. Sprinkle with cheese.

Also very good with arugala, too.

Too late for your lunch today but I like to make various kinds of pesto for my pasta. One of my favourites other than the ubiquitous Genovese is sundried tomato pesto (which you cannot have) but another uses almonds and mint with the basil. Thin it with some of the pasta water (pasta water contains starch which makes a smooth sauce) and add some Parmesan, Pecorino, Asiago...

Or simply quickly saute some thinly-sliced garlic and rosemary in olive oil, infusing it, then add lots of fresh pepper and cheese and perhaps some frozen peas and fresh herbs such as basil. Fresh lemon juice.

Another easy dish is to simply crisp some pancetta or chorizo, caramelize some shallots and proceed as above. I also like to make crispy shallots and crispy capers by very briefly frying in oil to add on top for some crunch. Not only that but I also do the same with fresh herbs - crispy basil and sage are lovely.

Or stick an onion studded with a couple of cloves into some bechamel (if you can have dairy) and top with plenty of cheese.

I like make pumpkin or winter squash-based sauces. Very good with some carmelized onion, black pepper, and the aforementioned crispy sage. (Or just plain ol' dried sage, warmed up in some olive oil.)

oooh good ideas eveyone. Ended up not making it yesterday (went to watch something on tv and crashed didn't wake up to later and decided oh well on it). I will make it today though.
