I am gluten sensitive and had cut out wheat for several months and started getting my period again, feeling great etc. Over the past few months, I've been cheating a bit in eating a bite of wheat here or there in things such as potato chips, chicken nuggets etc. Now I've noticed that I am feeling very tired again, and have gone back to having no periods. Can this really be just from having the ODD cheat of wheat here and there? I am not celiac as I tested negative for that.

Yes, it's most likely from eating a little wheat here and there. Celiac tests are wrong and miss celiac disease about 20% of the time. Trust your reactions and stick to the diet strictly.
