  1. So sorry to read this...can honestly say without any humor at all...been there, done that. Perhaps tell me what you know you can eat. I am a magician at turning 20 safe foods (individual ingredients) -- yep that is all i had for a very long time -- into very real meals. Hang in there - breath - and take one step at a time.

IMO...since you have removed a great many foods besides histamines and had a marked improvement since the elimination of histamines -- I would stay strict with the low histamine diet while taking the time needed to safely trial all the other foods you have removed.   7. There are indeed a multitude of presentations within Celiac Disease, yet as it stands today -- there is only one treatment which is the complete avoidance of the gluten protein. If you decide to return to eating gluten, I suggest you gather real data while you are experimenting with your health. Before you start, have a complete celiac antibody panel...

  10. We have the three ring binder that started the day I went gluten free with the dividers -- Still use an old copy of 'Better Homes "New" Cookbook' for basic "stuff" and of course there is now a laptop on the kitchen counter that didn't live there a few years ago.

  12. Ok...just printed this recipe to put in the old-fashioned paper notebook. Variations were: I used one 3 pound pork butt roast -- cheap, tender and what happened to be in my freezer Used all the left over juices as gravy -- next time I may even increase the sauce ingredients and use a larger roast so we can have encores. This made enough...

Roast was AWESOME and everybody loved it -- was nice new flavor -- funny it kinda smelt like I was serving good hot dogs with the works during the first hours of cooking -- J came home and started salivating around 2pm and the smell got much better/richer.   16. Anxiety is a fairly common symptom of Celiac Disease. My now 20 year old son with celiac disease had mild anxiety as a child that worsened in his teens. He removed gluten at 15 - it took a few years for his anxiety to subside, but it did improve. Today he has no more than occasional situational anxiety.   22. If your vitamin deficiencies improve on a gluten free diet -- that is another piece of the puzzle. Would be nice to have a certain answer -- but this may be one of those that removing gluten is what is needed to confirm you have an issue with gluten. Hope that makes sense.
