  1. Welcome Boo! 3 is excellent considering you started at 82! It is within normal range. If you are feeling well than there is nothing to do but stay the course, for life, every day. If you have lingering symptoms, take a look at the Newbie 101 section to make sure there aren't minute sources of gluten in your life - medications, supplements, cross...
  2. Welcome Louise! I've been at the end of my rope many times. Thankfully, I found this forum when I first learned the words celiac and living gluten-free....many members generously gave me another length of rope to keep me going each time I've been in need over the years As others have suggested...keep looking for answers. I happen to be doing...
  3. Welcome to the club Michelle! There really is no way to determine how long you have had active Celiac Disease. Many of us wonder along similar lines and I can tell you as your time gluten-free increases you may find minor health issues or symptoms improve that you never considered might have been caused by Celiac Disease. Congratulations on your...
  4. Thanks Arlene -- perfect for today.
  5. We have no A/C....we close all the windows and spend most of the time in the bottom floor walkout -- lots cooler down there. Stay cool -- 102 in the shade here and the winds are kicking a bit

  8. Thanks Irish I'm actually doing really well -- being prepared helps with my silly system as well as in other situations
  9. Greetings from Sunny San Diego....seems a fire bug or terrorist has figured out a way to tax our emergency services to the breaking point. Thankfully, the Santa Ana winds that were not predicted to calm for another few days have calmed a bit more than expected -- hopefully giving San Diego County and CalFire crews time to take control of the damage caused...
  10. It's been a year....has been another tough one for me with this silly health puzzle that keeps me searching for answers. You remain a strong presence in my thoughts -- pushing me to live strong and help those that are looking for answers that we may have already found. Miss you, my friend

  12. Unfortunately, many of us received the...it's all in your head, due to hormones, stress, overworked....etc....etc....etc. If you know your body is not working correctly..don't take that answer...keep looking
  13. Thanks! We are staying in a room with doors to the veranda....rooms are discounted fifty percent within the NP System right now....hoping to get a night at the john muir lodge in kings canyon on our way home
  14. Welcome back! I remember you and am pleased to hear your mother has improved gluten-free. Since she improved gluten-free and tested negative for celiac disease, she is either non celiac gluten intolerant or celiac (can't remember if she had endoscopic biopsies or just blood work while ingesting gluten). At any rate - you need to be tested for celiac...
  15. CL...enjoy your day near my hood and happy moms day to you too!
  16. Great to hear Irish....only camped once at the wawona campground...excited to stay at the hotel...added bonus the restaurant has a fabulous food menu - looks like the chef will be able to do something safe for me and they serve one of my favorite zins for eight bucks
  17. Fancy! Dinner tonight is paleo pizza for me and whatever we find at the Wawona Hotel Restaurant for the hubs as we are headed towards Yosemite right now....can't wait Oh....cuz I'm getting a bit of grains back I added a touch of flour to my paleo cauliflower-crust to help make it even closer to real pizza....so mine is now paleo (ish) pizza
  18. I used Bob's Red Mill because it was what I had on hand -- it calls for fava bean (or rice or sorghum) -- think the potato starch is important though. These were incredible to cook too -- I've made a lot of smaller "flour" tortillas -- usually I make gluten-free crepes -- but these were even easy to flip once the pans were right temp -- kinda like pancakes...
  19. Some of you know of my quest to make a good large flour tortilla -- it has been over five years since my kids have had a decent sized burrito -- living in the land of Mexican Fast Food makes that beyond difficult. The Quest is over! Thanks to a recipe passed to me by another nonWE -- we now have safe gluten free (decent sized) burritos for the first...
  20. oh cool...i forgot about the cones I had stashed -- will give them to the kids with Double Dark Chocolate hanging out in the freeze. Another attempt at man-sized flour tortillas -- if they work out -- Carne Asada Burritos -- if not it'll be taco salad tonight
  21. Come on over quick -- I'm not going to trial mine any time soon -- but you have to be fast -- just told son he could have it!
  22. I have one that my grandboy gave me -- he has Celiac Disease and just washed his hands after making it -- it passed from him to his mom to me -- we all have celiac disease (teacher forgot to let Mom know they were making them -- otherwise she would have provided gluten-free macaroni). I agree with Karen -- accept all handmade gifts from children -- just...
  23. Can't remember when my frig ever met a set schedule...tacos, etc and burgers sound perfect! You sportin' any Gelato? teasing...there is another thread you should join...
