Don't find much merit in this idea. Humans weren't designed to eat grasses. Besides, in America, hybridized dwarf wheat is often sprayed with glyphosate to cure it for harvesting, so this crap can't possibly be made safe to eat anyway. -

The enterolab test corroborated what I already knew, in my case. So why are you so concerned about tests? Why don't you just have her go gluten free and see what happens to symptoms? BTW, my dairy sensitivity went away after I had been gluten-free for several years. -

Low heart rate and lethargy could be hypothyroidism. Ever had a full thyroid panel (TSH,FT3,FT4,rT3,TPO antibodies,TG antibodies)? If gluten destroys gut integrity, autoimmunity follows. Possibly thyroid autoimmunity. -

I can't know what the cause of your anxiety, depression, and brain fog really is. However, you should know that all of those symptoms are classic hypothyroid symptoms. No, its not hard to be gluten free. At least where I live. Gluten is fiendishly difficult to digest, even for "normal" people. The wheat growers associations have covered that up. You should have the gliadin antibody and TTG tests before you have been off gluten too long. If you can afford it, there are stool tests that will show if you have developed... -
The association of gluten with various forms of dermatitis, is classic. Also if you are using products made with mass-market wheat, you could be experiencing the effect of an herbicide (glyphosate) that some farmers use near harvest, to mature and dessicate the crop.

It is known that many people who are sensitive to the gliadin in gluten, are also sensitive to the avenins in oats. There may be a test for avenin sensitivity, perhaps you should take that test to make sure. -

Get thyroid testing. At least TSH,FT3,FT4,TPO antibodies. Gluten can trigger Hashimotos. Hashis can cause hypothyroidism. Hypothyroid triggers anxiety, and even panic attacks, in most thyroid patients.

Don't bother dating a person who doesn't understand that the industrialized food supply is dangerous. If they won't tolerate special dietary requirements, then they certainly won't tolerate anything worse. But you say your anxiety is going through the roof. If you have anxiety all the time, you should make sure that gluten has not triggered autoimmunity...
