    Coconut Mango Rice (Gluten-Free)

    There is so much to love about this southeast Asian desert. It’s creamy and sweet and it tastes great warm or cold. It’s also simple to put together and one of those meals that just tastes like summer. I’m a sucker for mangoes, but if you already have them on hand, sweet oranges, or juicy satsumas make a fine substitute. Toasted coconut makes a nice topping for a bit of tasty texture.

    Ingredients:
    1 cup rice
    1 14-ounce can coconut milk
    1 cup fresh mango chunks
    ½ cup mango juice
    ½ cup water
    1 tablespoon butter
    1 tablespoon olive oil
    1 pinch of salt

    Directions:
    Heat olive oil in a large saucepan over high heat. Add rice and stir until well-coated. Slowly add coconut milk, mango juice, water and salt and bring to a boil.

    Cover rice and reduce heat to low. Allow to simmer about 15-20 minutes, until liquid is absorbed.

    Remove from heat and fluff with a fork. Stir in butter and mango pieces. Serve immediately.

    1 box Mochiko rice flour (1 pound box)
    3 cups water
    2 cups sugar
    6 tablespoons powdered cocoa (unsweetened)
    1 cup water
    Extra cocoa for dusting

    You can either use chicken pieces or half-chickens (I used chicken breast).
    Ingredients:
    Enough chicken for all
    Olive oil
    Small bottle of gluten-free "Praline Syrup" (about a ½ cup-usually found near bulk coffee section of store-- I used Almond )
    ½ cup of favorite gluten-free whiskey
    Handful of chopped pecans
    Onion slices
    Salt & pepper
    Directions:
    Preheat your oven to 375F. Wash and pat dry the chicken, and place skin side up in roasting pan(s). If making 2 pans of chicken, you may need to double recipe.     Seared ahi tuna is a real treat, and this recipe makes it easier than ever to serve up a delicious ahi feast on a stick. Just coat with gluten-free soy sauce and wasabi, grill lightly, and roll in toasted sesame seeds.
    Ingredients:
    1-2 pounds of ahi tuna (4-6 ounces per person) ½ cup gluten-free soy sauce 1-2 tablespoons wasabi toasted sesame seeds, black and white wasabi and pickled ginger as garnish Directions:
    Cut tuna into 1½-inch cubes.
    Place three or four 1½-inch cubes of sashimi-grade ahi tuna per skewer.
    Coat lightly with gluten-free soy sauce and wasabi.
