    Delicious Fresh Corn Soup (Gluten-Free, Video)

    This light, sweet, delicious corn soup is gluten-free, and sure to please.

    Celiac.com 10/12/2019 - Okay, so technically, peak fresh corn season is over, but there's no reason you can't still enjoy a tasty, delicious corn soup. This easy-breezy recipe comes to us from one of our favorite cooks, Chef John, at one of our favorite food blogs, Food Wishes. Simple and super quick, this soup delivers big flavor, and makes a nice addition to a larger meal.

    Ingredients for 4 small portions:

    • 3 cups packed fresh sweet white corn kernels (about 3-4 ears)
    • 3 cups cold water
    • 2 tablespoons unsalted butter
    • generously season with salt
    • cayenne to taste

    Directions:
    Cut the corn kernels off three or four ears of corn.

    Put half of the kernels into a medium sauce pan.

    Put the other half of the kernels into a blender and blend until smooth.

    Add the blended corn back into the sauce pan with the whole kernels.

    Cook on medium high heat and bring to a simmer.

    Once simmering, bring heat down to low and cook for about 30 minutes.

    When soup is cooked down, reduce heat to low.

    Add butter and stir until blended.

    Salt to taste.

    Add a pinch of cayenne as desired.

    Serve warm, and garnish with creme fraiche, bacon, minced scallions, as desired.

    2 tablespoons extra virgin olive oil

    1 dried red chili, crushed
    1 teaspoon minced fresh ginger
    1 red onion, diced

    This recipe comes to us from Dennis Dendinger.
    Juice Ingredients:
    ½ bushel ripe tomatoes
    1 bunch celery-sliced kind of thin
    2 large onions- chopped
    Directions:
    Boil together until everything is well cooked. Drain and take the juice, I use a Foley food mill.
    Boil the juice and add:
    1 cup sugar
    ½ cup butter
    1 teaspoon salt
    ½ teaspoon pepper
    Mix 1 cup cornstarch with water and stir in.
    I get 8-12 quarts per batch. Season to taste. Every batch I have made has turned out well. I use the soup as soup or a base for casseroles or chili.

    Talk about classic. It doesn't get much more classic than pea soup. I imagine some versions of pea or bean soup must go back hundreds of years, or more. Pea soup is simple, hearty, and delicious. This version of classic split pea soup is a satisfying meal that's gluten-free, low in fat and high in flavor and nutrition. This recipe makes enough soup to serve about four to six people.
    Ingredients:
    2 teaspoon vegetable oil or bacon grease
    1 cup chopped onion
    2 celery stalks, chopped
    1 large leek, chopped
    1 large carrot, chopped
    1 large clove of garlic, halved
    1 pound dried split peas
    2 meaty ham hocks, rinsed
    salt and pepper to taste
    2 teaspoons lemon juice (optional)

    Gluten-Free Tuscan Soup
    Celiac.com 01/13/2018 - To you and me, it may be Tuscan Soup, but to the sonorous, lyrical Italians, it is known as Zuppa Toscana. Whatever language you speak, it means a warm, satisfying and delicious meal.
    Ingredients:
    1 pound mild Italian sausage 1 can white or navy beans, drained 2 quarts chicken broth 6 potatoes, sliced thin 1 teaspoon crushed red pepper flakes 6 slices bacon, cut to ½ inch strips 1 large onion, diced 4 cloves garlic, minced 1 cup heavy cream ¼ bunch fresh spinach, washed, with stems removed Directions:
    Heat a stock pot over medium heat.
