    Plum And Apple Pork Tenderloin (Gluten-Free)

    Ingredients:
    1 teaspoon oil
    1 pound pork tenderloins, cut into ¼" slices
    ¼ teaspoon salt, if desired
    1/8 teaspoon pepper
    2 ripe plums, pitted, sliced
    1 large apple, unpeeled, sliced
    ½ cup apple cider or apple juice
    2 tablespoons brown sugar
    2 tablespoons cornstarch
    1 tablespoon water

    Directions:
    Heat oil in large skillet over medium-high heat until hot. Add pork; sprinkle with salt and pepper. Cook 5 to 7 minutes or until pork is tender and no longer pink. Add plums, apples and apple cider. Cover, simmer 10 minutes or until fruit is tender. Meanwhile, in small bowl combine remaining ingredients; add to skillet. Cook over medium heat until mixture is thickened and bubbly, stirring constantly; boil 1 minute. 4 (1-cup ) servings.

    2 cups water
    2 tablespoons butter or margarine
    1 tablespoon chicken bouillon (or 3 cubes)
    ½ teaspoon onion powder
    ½ teaspoon salt
    dash of sage
    dash of thyme
    dash of pepper
    Heat ingredients in a saucepan. Whisk together 2T cornstarch + ¼ C cold water in a small bowl Add to cornstarch/water to saucepan. Boil 1 minute to thicken. Makes 2 cups.

    2 (or more) pounds lean stew meat
    1 roasted soup bone* for flavor
    1 can S & W Ready Cut diced tomatoes (or 4 diced fresh)
    4 large potatoes peeled and cubed
    4 carrots, peeled & sliced
    1 onion peeled & cubed
    2 ribs celery, sliced
    1 cup water
    Salt & pepper to taste
    2 cups frozen peas (or green beans), thawed
    Put all ingredients in crock pot except frozen peas. Cook on high (325F degrees) one hour, and then stir. Cook on low (225F) for 7 hours. You may want to stir it again half way through the cooking time. Add frozen peas & allow just enough time to heat through (5 or 10 minutes). Serve with gluten-free crackers or rolls. How easy is that?

    2 tablespoons extra virgin olive oil
    2-3 cloves fresh garlic, thinly sliced
    1 dried red chili, crushed
    1 teaspoon minced fresh ginger
    1 red onion, diced
    Sea salt
    1 carrot, diced
    1 cup butternut squash, diced
    Mirin (rice cooking wine)
    1 cup fresh/frozen corn kernels (I used 1 can drained)
    2 cups cooked black turtle beans (I used 1 can black beans drained)
    5 cups spring or filtered water
    2 scallions, thinly sliced on the diagonal, for garnish.
    2 slices of bacon cut into small pieces (optional)
    Parmesan cheese (optional)
    5 cups spring or filtered water (optional: substitute chicken broth for part of the water)
