Most stores sell the same salads that are in the case also prepackaged, which come with an ingredient list. Some stores make nothing in store, some make everything in store. You can find out which is the case and decide whether your comfortable with eating their food by asking. When it comes to what is in the case, unless all of their deli salads are gluten free, I wouldn't eat any of them. They're all sharing a space and they just scoop out of one and pull that spoonful across others. Not exactly safe with CC.
