  1. Hubby and the kids ordered pizza tonight, so I made my own quick pizzas with some organic pizza sauce, Udi's bread, black olives, and Daiya cheese. They were pretty good!

  3. I try to hide my toothbrush so that my gluten eating children and husband won't accidentally use it.

  5. I find that I can turn out a loaf more quickly when I do it by hand. The bread maker's cycle takes a lot longer than me.
  6. I bought a bread machine and it really hardly ever gets used. So in my opinion, it's not very necessary.
  7. It is my understand that nothing packaged on site at Whole Foods is guaranteed to be free from gluten CC. Whole Foods has a sign on their salad bar stating that they are regrettably unable to offer any completely gluten free options.

  10. Salad and baked pasta. My pasta bake was a mix of different kinds. I made it with soybean pasta, chickpea rotini, and corn lasagna cuts.
  11. Yes, it's tough with kids. My 2 year old is always trying to grab at my face and mouth and also we're a fairly affectionate family, so there was the issue of kissing sweet little gluteny faces. LOL! So glad to be done with my daughter's gluten challenge!
  12. I totally understand not wanting gluten in the house! It's such a relief to be going back to a gluten free house after my kid's gluten challenge was done. I got glutened multiple times and my stress level skyrocketed. My kids just don't understand the concept of not touching my gluten free food after they've touched gluten.

For dessert, the kids had fruit and cottage cheese and I had fruit and soy yogurt.
  14. I'm on a bagel kick, so I've tried making a couple of batches of bagels, as well as buying some Udi's for comparison sake. My family likes the homemade better. I just got a new rice cooker that has more features than my old one, so I'm enjoying playing with that.
  15. I want to encourage you that it's perfectly possible to follow a strict gluten free diet even without a celiac diagnosis. Is your doctor willing to formally diagnose you with non-celiac gluten sensitivity based on your dietary results?

  17. It is my understanding that a non stick waffle iron surface will stay nice for a long time if you never wash or spray it. Recently, I did get some cooking spray that was gluten and soy free.   18. How new is your waffle iron? I don't ever spray or grease mine--it's non stick. ETA: I just re-read your original post where you said that your waffle iron is brand new. Provided that it is a non-stick surface all you should do is lightly brush it with olive oil to season it before your first use and then not put anything on it anymore. Non-stick spray...

  20. Curry is really good! I made a red curry last night with coconut milk and Thai Kitchen red curry paste. (and some honey and a little soy sauce) For veggies, I used onions, bok choy, and tomatoes. For protein, I put in baked tofu. I served it with plain white basmati rice.   22. Sounds like I'm not the only one who likes to splurge on Ore Ida stuff. I took the kids out to Fazoli's for spaghetti and breadsticks to get their gluten quotient in for the day and I pretty much had to live on peaches, peanut butter, and apple slices until my shopping trip was finished.   23. My splurge today was a Justin's peanut butter cup from the health food store. Yum! Today was a blur of activity and appointments with my 8 year old daughter's doctor's appointment (got the celiac panel ordered, yay!) and my husband getting his 3 unit bridge done, so I'm going easy for supper. Vegan seafood with tartar sauce.

I generally try to be polite and avoid stirring up drama, but when my vegan friends preach about the evils of eggs, I feel very tempted to say, "Try cooking gluten free AND vegan for 6 months and then get back to me on that." I know that being gluten free and vegan is possible, but it's certainly not anything that I feel like taking...
