Hey friends, i was hoping you might be able to help me!

I was wondering if any or you had any helpful tips for preserving homemade breads. Mine always turn out well, i let them cool completely and wrap them in plastic wrap to freeze; but when i pull them out the next day my loaf is dry and crumbles apart to dust.

My flour blend is made up of teff, quinoa, brown rice flour, tapioca starch, cornstarch and potato flour. My current blend of gums is xanthan gum and pectin.

Any advice you could pass along would be amazing!
