Cinnamon Apple Pork Recipe

Recommended Posts

Okay, bear with me because I don't measure anything when I add it. You may need to adjust amounts slightly. Trust me though, this recipe is well worth the trouble. My daughter gobbled it up and she doesn't like any meat.

1/2 stick butter (or the margarine equivalent)

1 lb. boneless pork chops, trimmed

1 thinly sliced apple (red or green)

1 tsp ground cinnamon plus 2 pinches for garnish

1/2 cup to full cup unpacked brown sugar (to taste)

1/4 cup finely chopped onion

melt butter in large saucepan at medium heat

add trimmed pork, apple slices, cinnamon, and brown sugar

cook until butter/sugar sauce begins to thicken and pork is cooked through

remove from heat and allow sauce to thicken (about 3-5 minutes)

serve chops and apples, drizzle with remaining sauce, sprinkle with remaining cinnamon

This would also be good served over mashed sweet potatos. I actually served this over mashed potatos with fried onions (fry whole finely diced onion in oil until light-medium brown, add to 4 servings of mashed potato).
