Does This Sound Like A Glutening To You?

I ate a tamale tonight, I didn't see any gluten listed but it could have been cc'd or something. Anyway , I felt really FULL right away, my stomach is bloated out but then it hasn't gone down yet, and I have these little pains all over my stomach, not BAD pains but enough to be noticed and not feel well. Then I am burping up chunks of undigested food like 3 hours later, it's horrible. It's like everything I've eaten in the past 4-5 hours is just sitting in my stomach going nowhere. I do not feel well at all. Could this be from gluten?

I dont feel like I'm having any success at ALL on this diet. I'm going to go on just fresh meat, fruit, veggies, potatoes maybe, and rice, starting tomorrow. If anyone has any suggested for what to eat for breakfast I'd appreciate it. I can see making lunch and dinner easy with soups and meat and veggies but I have never been a "fruit for breakfast" type, and I'm totally scared about what to do with my sweet tooth!!!

First, take a deep breath :P

It may be CC, but more likely a secondary intolerance. I am 4 months out and I still can't eat any grains, corn, processed foods of any kind, but I can have dairy and peanut butter now :P

THe best advice I can give is go very SIMPLE. Lean protein with salt and pepper. Steamed veggies and salads with homemade dressing. Try some yogurt with fruit for breakfast, or eggs scrambled with some veggies. The only "grain" I can tolerate is rice cakes, and I smear them with PB or a little cream cheese or yogurt with honey and some raisins. Eat the same boring foods for a few days, then branch out. Your gut is still healing. Enzymes and probiotics help a LOT, so if you're not taking them, think about adding them. Have patience, it gets better, slowly but surely :rolleyes:

Good Advice.

My larger meals are saved for the weekends - this saturday I made plain hamburger with classico pasta sauce(I used the Vodka sauce) - topped over Schar's gluten-free pasta (rice/corn blend) with a salad.

During the week.......

Coffee and Banana for breakfast - yogurt if still hungry for a mid morning snack

I also drink V8 Splash or Fusion or Veggie juices with meals or as an inbetween beverage (might be too acidic to most but hasn't affected me and I'm acid sensitive) or water.

Lunch is a big salad with a gluten-free meat like gluten-free luncheon ham or turkey or fried chicken or turkey breast with s/p and italian blend seasoning w/ lime juice.....plenty of veggies.....I add a sprinkling of cheese.

I top it with Bolthouse gluten-free dressing (1/2 the fat and gluten-free - plus tastes great!)

Dinner is usually something lighter like leftovers from weekend (smaller portion).....eggs and gluten-free toast......Baked potato with sour cream and bacon.......tonite it will be the remade 'safe' Pea salad that got me glutened last friday. (it was the ham)

One weekend I made wild rice with chicken breast and then it became soup after that for the week.

This still gives me my 4 basic food groups - dairy (lightly) / fruits and veggies (first and foremost) / meats / and wholegrains

I do the salad religiously.

Some of my favorite snacks are Red seedless grapes with monterey Jack cheese (Kraft)

Sugar snap peas with Bolthouse dressing for a dip

A handful of plain almonds

Hummus with Corn tortilla chips (but not too often)

I am planning tacos for my next weekend.......my Meijers store has gluten free Meijer brand products that allow me to do this.

I'm pretty boring for breakfast, I have the same thing every day. Three scrambled eggs in olive oil and coconut oil with sauteed tomatoes and onions and Hormel Naturals ham. I drink Constant Comment tea with that.

Lunch is usually leftovers. Dinner is usually fried or baked pork chops or chicken and vegetables. Sometimes a little rice. Snacks are Hershey's chocolate and nuts, cheese and grapes or pineapple. Now that the weather is changing I'll probably have some popcorn too.

I do eat other things but these are the most common. I've cut way back on the grains so I don't have too much of that or complex carbs like potatoes or sqaush. They are hard for me to digest.

The way you described the food sitting like a lump in your stomach is how I feel with the grains and complex carbs. The grains will also give me some pain when they finally get to the other end too. :(

Cereal is my favorite for breakfast, with or without fruit. Corn Chex and Rice Chex are both gluten-free and there are good cornflakes and fake Cheerios that are also gluten-free. I can't remember the brands right now, but they are both generally available anywhere with a gluten-free section.

Don't eat any other fruit than banana in the morning or you may start having acid reflux. Sugar on an empty stomach triggers acidity at least for me. I had a kiwi the other day even though I knew of the outcome but I really wanted to eat it and I had acid reflux in the next hours.

I was like you wondering what to eat for breakfast and I just hated I couldn't go to the grocery store and get the bread on the shelve but I feel so much better and it makes me feel good and gives me persistence. I started eating brown rice because I knew I would stay out of trouble with rice but that was the summer and in warm weather, I can eat anything. I am not into eating cereals even it is gluten free as I know it will be full of sugar. So, I learned to make my own flat bread sorta pancake every morning. I make the mix and leave it in the fridge and it takes me 10 minutes to make my breakfast ready. This is possible now that I finally found a good gluten free flour (Bob's Red Mill gluten free pancake mix). I eat it with olive oil and banana or with crushed avocado and banana. Try it and you will see it is delicious!

I am getting bored of food between meat fish nuts veggies and rice with the same flat bread every morning. But one good thing about boring food is that it makes you eat less (not working very well for me!) so you can avoid too much colories.

I am looking for more recipees for lunches. I am less hungry then when I was eating gluten but I am still hungry for some comfort food and my new friends are Smart food pop corn and french fries. For the fries, I have to discontinue because I was told to be careful to cholesterol but what else to eat? Maybe more soups but I don't like making soups and miines are all boring.

      I'm not saying this is what you have, but your description reminds me of Morgellons, which are not very well understood. Here is a review from a reputable source.       Hi Trent, no dairy. Other than good quality butter. I have been lactose free for years. No corn, sugar, even seasonings and spices. I don't eat out. I cook my own food.

      @nancydrewandtheceliacclue, are you consuming dairy? Not sure if dairy is part of the carnivore diet.

      Hello Russ! Thank you so much for your reply.  I have not had an antibody test done, ever, relating to gluten. Last year I had an allergy test done via blood draw (as my insurance wouldn't cover the skin test) but this was for pollen and grasses, not food. Even on the blood test I had extremely high levels of reactions to each allergen. Could this seasonal allergy inflammation be contributing to my celiac inflammation? I am so careful, there is no way I could ingest gluten. For example, couple of months ago I tried a cough drop that says it was gluten free. I checked ingredients, it seemed fine. But just taking one of those caused me to have nausea, vomiting, and the same extreme abdominal pain. Have you ever heard of anyone else having symptoms like mine after being diagnosed celiac and strictly gluten free? The last episode I had like this was yesterday, after I ate a certified gluten-free coconut macaroon with a little chocolate on it. I have eaten coconut and chocolate before with no issue,  so I didn't see how I could all of a sudden have such a strong response.

      The sensitivity of people with coeliac disease varies greatly between individuals. The generally accepted as safe limit for most people is 10 milligrams per day. This equates to a piece of bread the size of a small pea. Some people report that they are more sensitive than this, but others can very occasionally eat a normal gluten containing meal without reacting. I don't think that touching or throwing bread around would lead to you ingesting enough to cause a reaction. There are case reports of farmers with coeliac disease reacting to the dust from gluten-containing animal feed but they were inhaling large amounts of dust over a long period of time in barns. Perhaps you episodes are caused by a reaction to something other than gluten? Have you had your antibody levels checked to see whether you are still being exposed to gluten?
