    Celiac.com 09/04/2014 - Enjoy the combination of Havarti Cheese, Crisp Apple and Almonds in this fresh salad!

    To make fresh Havarti and Apple salad for four you need:

    • 8 oz. Havarti Cheese
    • 5 Cups Organic Mixed Baby Greens
    • 2 Cups Organic Crisp Apple, Gala or Granny Smith diced
    • Gluten Free Vinaigrette, chilled
    • Sea Salt and Ground Pepper, to taste
    • 4 tbs. Almonds, sliced optional

    Directions:

    1. Place 4 salad plates with the forks on top of the stack, into the refrigerator to chill while you prepare the salad.
    2. Rinse the organic mixed baby greens and pat dry with a paper towel or use a salad spinner.
    3. In a large salad bowl arrange the mixed baby greens and layer diced apples on top.
    4. Next, drizzle the mixed baby greens and organic diced apples with Gluten Free vinaigrette; mix well.
    5. Then layer the Havarti and sliced almonds over the salad mixture. Place bowl of salad into refrigerator 5-10 minutes.
    6. Season fresh salad to taste, serve immediately onto the chilled salad plates and enjoy with chilled salad forks!

    The state of Minas Gerais is known throughout Brazil for its cuisine, and there are places in other parts of Brazil where one can buy pã de queijo and other mineiro specialties. Any mineiro cook can make pao de queijo, and there are endless recipes and methods for it. Minas Gerais is also known for its cheeses; the Wisconsin of Brazil, if you wish.
    Makes 2 dozen appetizer-sized balls.
    Preheat oven to 375°. Boil the following until white foam appears (on stove or in microwave):
    ½ cup vegetable oil
    1/3 cup water
    1/3 cup milk
    (1 tsp salt optional)
    Add this hot mixture to 2 cups tapioca starch. Mix well with wooden spoon
    and let rest for about 15 minutes. You will get white ball. Mix in 2 eggs

    I find baby artichokes a little underrated; they’re easier to handle and usually cheaper. I tried these for the first time on the grill, but it’s just as easy to toss together and roast. I happened to have pistachios on hand the second time around and they turned out to be the secret star of this dish.
    Ingredients:
    9-10 baby artichokes, about 2 pounds
    1 broccoli head, cut into florets
    1 lemon, cut in half, plus 1 teaspoon zest
    ¼ cup shelled pistachio nuts
    2 cloves garlic, minced
    ¼ cup olive oil plus 1 teaspoon
    2 tablespoons balsamic vinegar
    ¼ cup parmesan cheese, freshly grated
    ½ teaspoon each salt and pepper

    Preheat oven to 400º F.

    Kale and Swiss Chard Stir Fry (Gluten-Free)
    There is a variation on this tasty recipe using Rainbow Swiss chard and pine nuts on my Web site.

    Ingredients: 2 cups TruRoots gluten-free penne pasta 1 Tbsp. Barlean's coconut oil 1 large bundle Swiss chard 1 large bundle kale 1/3 cup walnuts, finely chopped 2 tsp. fresh lemon juice 1 tsp. fresh lemon zest 5 chives, finely chopped 1/4 tsp. sea salt 1/4 tsp. freshly ground white pepper Instructions: Cook pasta according to package directions. Meanwhile, wash Swiss chard and kale; cut into 1 inch pieces. Heat coconut oil in a large skillet over medium heat. Add Swiss chard; cook, tossing until tender, about 3 minutes.     Celiac.com 08/12/2014 - Here’s another easy summertime drink that will turn a few heads. It blends watermelon with sweetened lime juice and crushed ice to deliver a refreshing burst of summer!
    Ingredients:
    8-10 cups seedless watermelon chunks (about 2 pounds) 2-3 tablespoons Rose’s Lime Juice, to taste 3 tablespoons fresh lime juice 2 cups crushed ice lime slices for garnish vodka, rum, or tequila, as desired (select gluten-free varieties if you have concerns) Directions:
    Combine all ingredients in a blender and puree until smooth (add a few tablespoons of water, if necessary).
    Add lime juice to get desired sweetness.
    Transfer to a pitcher filled with ice and serve in tall glasses.
