    Luna & Larry's Coconut Bliss Gluten-Free and Non-Dairy Dark Chocolate Ice Cream

    The other night I picked up a pint of Dark Chocolate Coconut Bliss organic ice cream from my local market, and my family and I had it for dessert. Coconut is all the rage now because it's packed with essential fatty acids, and we've been looking for healthier alternatives to normal ice cream. Our family could not have been more pleased; Coconut Bliss delivered with a creamy tasting full-flavored ice cream that left nothing to be desired, even though it was in fact gluten, soy, and dairy-free—and it’s even organic. We will definitely buy it again!

    I just want to second the love for Larry & Luna's Coconut Bliss! Absolutely the best coconut 'ice cream' I've had since I developed milk and soy allergies and found out I also had celiac disease. My favorite is the vanilla. It's not too sweet and reminds me of the ice creams I used to be able to eat in England, back in the day. Mmmmmm!!

    I am really blown away by Coconut Bliss, especially the Dark Chocolate.

    It is so rich and dense and creamy, but when I eat it I feel fine, actually, great, afterwards!! (unless I eat a whole pint) It is so satisfying. And you can feel the good vibes in there, so much thought and care goes into making it.

    I recently discovered Bold Organics gluten-free and dairy-free Meat Lovers Thin Crust Pizza.  There are very few gluten and dairy-free pizzas on the market, but I have to say that this was the best that I have tried to date.  I just put the frozen pizza on the top rack of my oven for about 20 minutes, and you could almost tell when it was done as the aroma drifted into our living room.

    Bakery On Main Gluten Free Apple Pie Flavored Instant Oatmeal
    I am not a fan of any flavored gluten-free instant oatmeal, but Apple Pie Flavored Instant Oatmeal from Bakery On Main is the exception to my rule.  There are no artificial flavors and they only use real dried apples and cinnamon which gives it a true homemade comfort taste.
     
    This instant oatmeal is also blended with chia seeds, quinoa, and amaranth for additional nutritional value but you would never know if you didn't read the ingredients.  Just add hot water, which makes the individual packets perfect for traveling, or to keep on hand as a healthy snack.

    Fish oil supplements provide well-established health benefits, but they are especially beneficial for celiacs because they aid in the recovery of fat levels and reduce intestinal inflammation. Eagle Therapeutics' CeliAct Fish Oil is tailored specifically to the needs of celiacs: taking CeliAct alone is great, but you really need that extra fat to heal your intestines.
    The capsules are of a decent size, but I can easily swallow two at once. I have not taken other fish oil supplements, but I know that many who do experience the dreaded “fish burp”. I am happy to say that I still have not experienced this phenomenon, but I have noticed feeling generally more focused. Placebo effect or not, I'm going to keep taking them.
