    Taco Seasoning (Gluten-Free)

    Reviewed and edited by a celiac disease expert.

    This recipe comes to us from Phyllis Chinn.

    1 tablespoon potato starch
    1 teaspoon chili powder
    1 teaspoon paprika
    ¾ teaspoon salt
    ¾ teaspoon minced onion
    ½ teaspoon cumin
    ¼ teaspoon cayenne pepper
    ¼ teaspoon garlic powder
    ¼ teaspoon sugar
    1/8 teaspoon pepper

    Combine all ingredients in a small bowl. Add spices and seasonings and ¾ cup water to 1 pound browned ground meat. Bring to boil, cook 7-10 min., stirring occasionally. Makes filling for 12 tacos (about 3 Tbsp) each.

    Great blend. I used tapioca starch since that is what I had opened. So much easier than trusting a packet's contents.

    The heat comes from the cayenne right? I like the flavor but don't want any heat really. Advise?

    Ingredients:
    One pound boneless, skinless chicken breasts cut in two to three pieces each.
    Two teaspoons (or more) taco seasoning mix
    Two thirds cup bottles salsa OR one can Ro Tel diced tomatoes with green chilies partially drained
    Two thirds cup shredded cheddar jack cheese
    One-four ounce can diced green chilies (can use less)
    Sour cream
    Sliced black olives
    Directions:
    Combine chicken and seasoning mix in bowl and toss. Heat skillet with cooking spray and cook chicken until browned. Arrange chicken in a dish coated with spray. Top with salsa or tomatoes, cheese and chilies. Bake at 450F for approximately eight minutes or until done.
    Top with sour cream and black olives.

    2 cans Heinz beans in tomato sauce
    2 cans Heinz Chili style Kidney beans
    1 can Hunts-Wesson tomato sauce
    1 can tomatoes
    1 small Imagine Tomato soup (if you can find this, just add extra tomato sauce)
    Extra lean hamburger
    1 green pepper, diced
    1 red pepper, diced
    1 onion, diced
    1 cup corn
    2-4 tbl Chili powder, McCormick or Club house (add as much as you want)
    Cook hamburger and vegetables until done. Add everything in a big pot and heat.

    The secret to great enchiladas lies in the sauce. Canned or store-bought saucesusually fall short on flavor and often contain wheat. Many recipes also call for wheat to thicken the sauce. Here's a recipe that will deliver a great, authentic tasting enchilada sauce that will be naturally thick without requiring any flour or thickener.
    Ingredieints:
    6 medium dried ancho chiles, dried
    4 medium guajillo chiles, dried
    4 cloves garlic, unpeeled
    ½ tsp black pepper
    ½ tsp ground cumin
    2 cups chicken broth
    1 teaspoon salt
    Juice of ¼ to ½ fresh lime
    Pinch of sugar, as needed
    Directions:

    Ceviche is one of my very favorite summertime dishes. It's one of those magical dishes where simple ingredients, simple preparation, and a bit of time combine to form a delicious, refreshing and memorable dish.
    Not only do I consider ceviche to be delicious and refreshing, I consider it to be lucky. That's because, back when I was single, I took the woman who would later become my wife out to a local Peruvian restaurant for ceviche on our first date. The place specializes in ceviche, and we ordered several kinds. And while I'd like to think that the charm that eventually won her over was mine alone, I still give some credit to the ceviche she found so delicious.
    I can't guarantee that this ceviche will help you land the partner of your dreams, but it certainly can't hurt your efforts...
