Watermelon, Mango, and Avocado Salad (Gluten-Free)

Reviewed and edited by a celiac disease expert.

I can’t say enough about the wonder of no-cook meals. When the weather heats up and you want to spend as little time as possible in a hot kitchen, easy to make salads like these are perfect. This particular salad is so delicious, refreshing and juicy, that you’ll happily welcome a few drips running down the side of your mouth. Tossing in some arugula or baby greens is a nice compliment, but the fruit stands beautifully on its own.

    Ingredients:
    4 cups watermelon, 1 or 2-inch chunks
    2 mangos, chopped
    2 avocado, chopped
    1 cup cherry tomatoes, halved
    1 red onion, thinly sliced
    ¼ cup mint
    ¼ cup olive oil
    2 tablespoons white wine vinegar
    1 lime, juice and zest
    Salt and pepper to taste

    Celiac.com Sponsor (A12):
    Directions:
In a small bowl, combine vinegar with lime juice and zest. Whisk in olive oil and season with a pinch of salt and pepper. Add sliced onions to the bowl and marinate for about 10 minutes.

In the meantime, add watermelon, mango, avocado and tomato chunks to a large bowl. Toss with dressing and onions. Finish with mint, thinly sliced or chopped.

I make a similar salad without the lemon and tomatoes, but I have never added watermelon! Yum! Great recipe...and I have all of the ingredients! Thanks for sharing, Jefferson!

This is a keeper - Such great flavors! The only thing I'd change is the ratio: I'd make the melon, avocado, tomato and mango all equal. I cut each to the size of the halved cherry tomatoes, which made for ideal forkfuls of flavor.

If you want a tasty, healthy treat that's cheap, super simple to make and delivers big flavor, try this recipe for homemade applesauce. It's one of those dishes that kids can help you make, and which will leave smiles all around.
    Ingredients:
4 apples - peeled, cored and chopped ¾ cup water ¼ cup white sugar ½-¾ teaspoon ground cinnamon, to taste Directions:
In a saucepan, combine apples, water, sugar, and cinnamon.
Cover, and cook over medium heat until apples are soft, about 15 to 20 minutes.
Allow to cool, then put them in a blender and blend until smooth. If you don't have a blender, then you can mash them with a fork or potato masher.
Serve alone, or over ice cream or frozen yogurt.

Celiac.com 07/15/2014 - The heat of summer begs for something cool and refreshing. Having something familiar, yet a little off-beat can help too. This recipe delivers a tasty, thirst-quenching strawberry lemonade with a dash of mint. It's the perfect thing on a hot day.

1 bunch of fresh mint 1½ quarts fresh cool water 2 pints fresh strawberries, washed and hulled 1 pint fresh lemon juice (about 12-15 lemons) 1 cup sugar, to taste Directions:
Put water in a pitcher or container and add sugar. Allow sugar to dissolve, stirring as needed
Place strawberries and lemon juice into a blender and blend well.
Add more or less strawberries as desired. Sweeten or dilute as needed.
Muddle sprigs of mint into tall glasses, and add ice and lemonade. Serve cold....
