Gluten Challenge -- How Much Gluten Is Enough?

I've seen people mention that you should eat a couple of slices of bread a day -- Lisa suggested a grilled cheese which made me smile...

The first day I ate a cheeseburger with the bun and my symptoms were back within an hour and I felt bad most of yesterday as well. Last night I had a donut and a croissant. (Because I'm thinking if I have to eat gluten, I should eat fun stuff...)

I don't feel too bad this morning. Are the donut and croissant enough gluten for the day?

Should I be eating more?

What's the purpose? Are you hoping for a dr,'s diagnosis? Or just trying to document your symptoms?
