    Drunken Holiday Apples (Gluten-Free)

    Cooking with booze is one of the great culinary rites of the holiday season. Apples sauteed with butter, sugar, and cinnamon and polished off with a splash of bourbon, rum, or liqueur are one of the easiest, tastiest gluten-free holidays deserts to make.

    Start by finding yourself some good, crisp, tart apples. I prefer Granny Smiths, Braeburns, Galas, or Pippins, as their tartness combines well with the sweetness of the sauce. But, I've had success with Golden Delicious and Jonathans, as well.  Remember, the alcohol boils off during cooking, so this desert treat is safe for kids. I recommend serving these delicious treats with a big helping of vanilla ice cream. This particular recipe makes enough apples to serve about a dozen people.

    Ingredients:
    1/2 stick of salted butter
    12 granny smith apples, peeled, cored, and cut into wedges
    1 1/2 cups white sugar
    1 teaspoon salt
    1 cup brown sugar
    2 tablespoons cinnamon
    1/2 teaspoon nutmeg (optional)
    1 tablespoon vanilla
    1/2 cup bourbon, dark rum, or liqueur such as Amaretto, Frangelico, or Grand Marnier


    Preparation:
    Wash, core and peel apples.

    Slice apples into 1/2 to 1/4-inch wedges

    Soak apples in booze for 30 minutes. Pour off booze, reserving 1/2 cup.

    In a medium bowl, mix sugar, salt, cinnamon, and nutmeg, if desired.

    Melt butter in a frying pan over medium heat.

    Add apples and cook slowly, allowing them to brown slightly.

    When apples have softened and browned, add sugar, cinnamon, and nutmeg and mix well.

    Pour in vanilla and just enough booze to coat the apples, up to 1/2 cup.

    Stir well and heat until apple mixture is juicy and the juice boils.

    Reduce heat to low and simmer about 10-20 minutes until apples are tender, and most of the liquid evaporates. Stir as needed to avoid sticking and burning.

    Serve warm with vanilla ice cream.

    Bourbon is allowed to be made with mixed grain mash. You are taking a big chance drinking it. It is not gluten free by a long shot.

    This recipe comes to us from Jonathan Hammer. Follow standard beer brewing procedures with respect to sterilization and fermentation.
    Recipe Per 1 gallon product:
    1 pound buckwheat honey
    1/3 ounce Challenger Hops
    Yeast nutrient
    Water to make 1 gallon
    Ale Yeast
    Reserve small amount of hops. Boil honey, water, and bulk of hops for 30 minutes. Add reserved hops and boil for another 5 minutes. Strain off the hops. Cool to room temperature. Add yeast nutrient as per package directions. Transfer wort to glass carboy. Prepare yeast as per package directions and add.
    Fermentation can last up to 6 weeks.
    When fermentation is complete, siphon into another glass carboy and store in a cool location for clarification (about 2 more weeks).

    Skewer Ingredients:
    12 (9") skewers
    1 pound boneless skinless chicken breast, cut into 1 ½" pieces
    1 (12 oz.) package gluten free smoked sausage
    8 oz. medium shrimp, peeled & de-veined
    ½ cup butter
    3 Tablespoons Tabasco sauce
    2 Tablespoons gluten free mustard
    1 teaspoon garlic powder
    1 teaspoon dried oregano
    ½ teaspoon pepper
    Rice Ingredients:
    2 tablespoons butter
    1 red pepper, diced
    2 ribs celery, diced
    1 small carrot, diced
    1 ½ cups rice
    2 Tablespoons ketchup
    ½ teaspoon garlic powder (I used fresh minced)
    ¼ teaspoon dried thyme
    ½ teaspoon salt
    1 can (14 ½ oz.) gluten free chicken broth.

    I love fruit smoothies! I love them for breakfast, I love them for lunch, I love them for a snack, and I even love them for dessert.
    This smoothie is one of the easiest, moist satisfying smoothies I know how to make. It's also quite flexible. You can use so many different kinds of fruits or berries, according to your tastes or what's available.
    For each smoothie take:
    1 banana
    1/2 cup yogurt
    1 cup of whole raw milk, or whole, non-homogenized organic milk
    1/2 teaspoon organic vanilla
    1 tablespoon honey, dissolved in 1 tablespoon wam water
    1/2 cup strawberries
    1/2 cup blueberries
    1/2 cup blackberries
    1/2 cup peach
    1 pinch of sea salt
    Mix ingredients in blender until smooth. Serve immediately.

    Update chicken night with fresh apples and seasonal cider for a meal that feels like fall. Anytime you cook down apple cider, the flavor intensifies making this a nice pair to rice and vegetables, whichever you happen to have on hand. A crisp Granny Smith works best to compliment the cider, but any apple will do.

    4-5 boneless chicken breasts or thighs
    1 ½ cups apple cider
    1 small onion, chopped
    1 apple, sliced into ¼-inch wedges
    2 cloves garlic, chopped
    2 tablespoons olive oil
