8 ounces string cheese sticks, room temperature

1/2 cup Bob's Red Mill all-purpose gluten-free flour

Salt and pepper

1 egg, lightly beaten

1/2 cup gluten-free bread crumbs (small pieces - dried in oven)

Extra-light olive oil, for deep frying

Bottled chunky marinara sauce, for dipping

Cut cheese sticks into thirds. Place flour on a plate and season it with salt and pepper. Put the egg in a small bowl. Place bread crumbs on a plate.

Add cheese pieces to gluten-free flour and toss to coat. Dip in egg, and then roll in gluten-free bread crumbs. Arrange breaded cheese in a single layer on a tray or baking sheet. Let stand for 15 to 30 minutes. Pour oil into large skillet to a depth of 1-inch, and heat over medium-high heat. When oil is hot, carefully drop cheese pieces in, a few at a time, and fry until golden, about 30 seconds.

I found that making them smaller (cut the cheese into thirds) makes it easy and remember to let the sticks sit for 30 minutes before you put them in the oven (Refrigerate if necessary)

Roll the stix so they are covered

Cook for 30 -45 seconds

This recipe is hard because it is easy to let the cheese get to room temperature before you put them in the oil, which makes for messy cheese stix -- melts too easily

Hope this helps

I was always told that the secret to making any mozz sticks is to keep it frozen. frozen cheese will cook better and enable you to cook longer without the cheese melting out of the breading.
