Peek-a-blues (blueberry Bisquits - Just Like Bisquick!)

Here is a recipe I figured out from biscuits my mother used to make from a recipe book by Betty Crockerthat used bisquick. I believe they were called:


1c blueberries

2T & 2T sugar

1/2 t nutmeg

1/2 t cinnamon

2t lemon juice

2c Bobs Red Mill gluten-free pancake mix

1/4c soft butter

2/3c milk

Preheat the oven to 450.

Mix together the first 5 ingredients, using only 2T of sugar.

In a large, separate bowl, mix together the pancake mix, the other 2T of sugar and the butter until crumbly, then add the milk all at ounce.

Mix with a fork until it is a soft dough, then beat for about 15 strokes.

In muffin tins or an oiled muffin pan, drop 1T of dough, in each, then 1T of blueberry mix, then top with a scant Tablespoon of dough.

Bake for 10-15 minutes, then remove from pan immediately.

Makes 6-8

Just like the gluten-y ones my mom used to make! Yum!
