Looks like your doctor is wrong and you do have Celiac Disease in addition to your wheat allergy - Make sure your primary doc gets copies of all these tests -- unless you want to proceed with an endoscopy, there is no need for a celiac specialist. I would definitely have your uncle look at it -- every lab words things differently and it's hard without seeing the report to help more. I think positive celiac antibodies with symptom resolution after removing gluten is enough...

  6. I agree with Nicole It is extremely frustrating, but the endoscopic biopsy is not perfect and only two samples from the small intestine is not optimum.   13. These are very strong claims without support. I have what I consider very strong celiac genes. I am adopted so I do not know the up leg -- yet I do have three celiac genes and my children and grands all have celiac. I've done a bit of genetic research and I must say - I have no idea what being second generation American has to do with celiac disease...

  22. I used a teatowel/cheesecloth to squeeze out as much moisture as possible from my grated cauliflower -- thinking I may need to do again when I defrost each packet for pizza -- making cauli "rice" won't have the same issue.
