  1. I think that as long as someone doesn't start subbing in a lot of G F carb-heavy items (breads, crackers, cookies, pretzels, pastas )etc , most anyone who goes G F (essentially a modified whole foods/paleo or atkins kind of food plan) will lose weight and have more energy.
  2. I'm old school...I still like to roll my enchiladas...cuz, it's how I roll....get it? get it..wha??
  3. I would suggest no cheating, but that's just my opinion. But maybe you have your reasons. and it's none of my business. so I'll zip it. lol Last night, we had chicken enchiladas with salsa verde. Ski, I guess our working theory about tomatillos not bothering me was solid! hey, if any of you can't "do tomatoes" right now for whatever reason, tomatillos...
  4. I find it interesting that on JULY 5, Ami asked a simple question: Anyone ever asked a grocery store how they cut their freshly cut fruit? Just had a reaction and I don't know to what - but I did have pineapple from the grocery store that was precut and sold in a plastic container. Any chance that could be it? Some of us gave simple answers in response...
  5. I am eating blue cheese dip I made myself right now....yum!
  6. Use your inside voice, young lady! I LOVE LOVE LOVE your unicorn, honey...forgot to say that earlier!! I use Against the Grain baguettes. They are in the freezer section. Bring to room temp, slice on a bit of a diagonal to give you a decent hors d'oeurve size. Line a cookie sheet with aluminum foil, then brush the slices with EVOO, sprinkle with...

  8. I need to make you mine Jenny, don't change your number 8675309 Soooo... had a great time with the neighbors on Sat. Night. They came for drinks and apps at 4:30 and stayed until 9. Now, those are MY kind of peeps....... lots of laughs. She's a doll. She brought me a basil plant. And they both "get celiac" and what gluten free means --we only...
  9. Good for you, honey!! whoohooo!. As you know, I, too had serious insomnia for most of my adult life and during the 3 years before DX, when I was quite ill, I barely slept more than a few hours at a time. (pain and ramped up everything kept me from being able to rest very much) I could never lay down and take a nap like some can do--just too jumpy and...
  10. It's not frustrating for me at all to reassure you, Beth. I get it,. I really do. I was often frustrated with my slow progress the first year and half. But it happened. I kept a list of all my symptoms and each time one resolved, I crossed it off. It made me feel better to see it on paper, i guess. Stress does not help anyone with AI diseases because...
  11. Heard the fibro word back in the 90's. Dismissed it. I felt I did not fit the symptom profile at all. Heard it again in 2004. One pain management doc, in a 5 minute consult poked me in a few places and said 'you have fibro. sorry... there's no treatment for that.". Another doctor told me "it doesn't exist" Neither my rheumatologist , my PCP nor I thought...
  12. We had chebe pizza last night, K garlic olive oil, fresh toms, BACON, sauteed shallots, 3 cheeses: provolone, mozz and parm-reggiano. This week was; (1)french onion soup (Karen's fave kitchen gadget style) it was truly awesome--I used Stephanie O'Dea's recipe as the base. Added sherry. instead of floating bread and cheese and putting it under the broiler...
  13. that eggs and cholesterol thing---complete reversal on that opinion by the medical types. Eggs are good for you. Again, my grandpa ate eggs every day. With sausages and bacon. Toast and jam. black coffee. Read this: Open Original Shared Link We need to acknowledge that diverse healthy populations experience no risk in developing coronary...
  14. My mother does not care what anyone says or thinks. She does what she wants. lol I know I can't have MSG, nitrates, and food dyes..(it's a histamine thing and causes some icky symptoms) and .man, . I hate that I can't have M and Ms..... dang! ah well, probably better for me in the long run.... less weight on the hips.
  15. There are some food additives that may be harmful--long term--for everyone. Whenever some tells me "Such and such food is BAD for you (eggs, beef, oysters, bacon, etc) I think of my grandfather who ate anything he damn well pleased and he lived to be 92. (except for a cataract, he was in decent shape). My mother does not make the same creative...
  16. Ruth, take out all veggies with an R in them. ! I "heard that" they are very bad for us. j/k I just wanted to see if I could hear you scream all the way over here (?down here--not sure where you are exactly) in Florida.
  17. here is what my GI celiac doctor orders for me. 18. No, she's not the only one. I have read all kinds of alarmist information on the internet (and even right on here!) You'd be stunned to read what some people *think* is a problem. if I believed everything everyone says is "bad for a celiac", the list of foods I could eat would include: water and lettuce. I'd be pretty thin, peeing my brains...
  19. I do not know who told you that eating certain foods was not good for you. What they probably said was that spicy things can bother you. I recall you saying your stomach was upset after eating spicy stuff. ...and people said to avoid it if it bothers you. That's all. Who says you can't have cruciferous veggies??? here's a suggestion.....stop reading...
  20. I am not sure what cookbook you are looking at, but the Joy of Cooking for example, (one of the old standards for cooking) does not rely on processed foods for recipes. I gave a bunch of meal options in the Newbie 101 thread. Take a look. (under COPING) yes, there are some gluten-free products thrown in for convenience, (I was trying to help people...
  21. Well, I said it, then Gem said it, then Ski said it.....I think we drove that message home. "absolutely no diarrhea" is cause for celebration around these parts!! whooohoo!
