Eating food cooked on a grill (eg, quesadillas, fish)

Hi, my 9 yo daughter has celiac. At Mexican restaurants or burrito shops, I'd like to order her a quesadilla on corn tortillas. I am concerned about cross-contamination from the the quesadilla being cooked on the same grill as flour tortillas. What do other people do? Does it help to ask to clean the grill? Other food items apply too, like grilled fish.

If you have Celiac, you would want a clean grill or piece of foil.  Pieces of flour tortilla will stick to the grill and then transfer onto your corn tortilla.  Same with grilled sandwiches.

I ordered mahi mahi and baked sweet potato fries off the special gluten free menu last night and had a head ache all day.  They said they cleaned before making my food but I assume it is difficult in a restaurant kitchen.

In Mexican restaurants, I ask them to heat the corn tortillas in foil.  Also, make sure you ask if the chips are made in a dedicated fryer.

Another thing you need to think about is... When you order fish, they typically DREDGE white fish in flour prior to grilling - so be sure to ASK EXACTLY how the chef in the kitchen cooks it!

      The ulcers are prepyloric ulcers. Not sure if that makes any difference.

      I had what was termed "lesions," and normally ulcers are in the stomach, rather than the small intestines. I'm not sure why they would want you to have her continue to eat gluten, since she had a positive blood test, but as her doctor said, if she is uncomfortable and having symptoms why not have her go gluten-free at this point? If her symptoms improve, it would be another indicator that she has celiac disease and/or gluten sensitivity. This article has some detailed information on how to be 100% gluten-free, so it may be helpful (be sure to also read the comments section.):
