The What's For Dinner Tonight Chat
GottaSki replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
Try very hard to not become afraid of any food. Keep a good log of reactions and trial any food you remove after some time. The trial should be that whole food only...as in eat one hard boiled or fried egg (with nothing in the pan...good nonsticks work for this) all by itself..,preferably before anything else has been ingested that day and only on days... -

I'm not Karen but do make Brazilian Cheese Bread often thanks to Addie's suggestion many moons ago. Here is one I use most, but have done others: http://www.simplyrecipes.com/recipes/easy_brazilian_cheese_bread/ -
Celiac is an autoimmune disease. Accidentally ingesting gluten once gluten-free can trigger a cascade of symptoms until your body gets the message that there isn't more gluten to mount a defense to. It can take time. Eat whole foods and drink a lot of water. Some have luck with nettle or ginger tea. That being said...checking in with your doctor is...

I make a bread like substance with apples ground in the blender added to coconut flour, sugar (or agave or honey), cinnamon and one egg...the egg could be replaced to but I'm fine with them in moderation. Oh I usually add a touch of vanilla too...I love vanilla Half coconut/half almond flour is good too. -

We use a lot of different brands of pasta and found the range of time to be the problem....we set timer for the longest recommended time and then check...usually 1-2 mins longer. And ALWAYS rinse gluten-free pastas with lots of hot water before serving. -
The incredible edible egg! Recently got them back in moderation...so thankful to have them back in my safe foods. Never removed due to gluten...eggs are gluten-free and one of the best portable protein sources ever!

ARCHIVED Blood Testing
GottaSki replied to AJO21's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Wow...I've had friends go there ... Lots of testing over several days, but an endo wasn't done until later in the process. Again, that would be a huge improvement in "modern" GI offices, yet sincerely doubt this poster needs to fast for their initial appointment. -

Have you experienced this? I have never heard of endo at an initial appt...although it would be great! -

My vote would be no challenge. Without other symptoms besides underweight...I'd wait it out too. -

Love it! My dad picked up that book because I told him how easy some of his favorite desserts I send over are to make. -

If symptoms are continuing gluten-free...I'd vote for endoscopy WITHOUT challenge. I had four annual endos until celiac biopsies finally improved. If he doesn't have symptoms I would simply carry on and wait for his next annual antibody panel. Hang in there! -
Ohio! Daughter and her family just moved there for many good reasons. They are near Canfield...which means I'll be visiting the buckeye state often

Try Glutino (freezer), Canyon Bakehouse (fresh bread section) and our new favorite Three Bakers (freezer). Three Bakers even have a "rye"... Had to try a slice of that myself Dinner tonight is some oven crispy chicken tender thingys. If they are a hit I'll share here. Also have the other half of baked beans I made in KFG last week back in KFG for... -

I worry more about the incorrect negative....while getting a positive in error is very disconcerting, at least a person with celiac disease would know to investigate more....while the person with many non-specific symptoms would cross celiac disease as a possibility : ( Have you decided to retest? Also, maybe I missed...did he have positive or even high... -
ARCHIVED Gluten Free, Going Broke
GottaSki replied to janiney08's topic in Gluten-Free Foods, Products, Shopping & Medications
Lots of prepackaged and processed foods are gluten free. Both Fruity and Cocoa Pebbles...all chex except Wheat Chex. Frito Lay Chips. Pebbles, Cheetos and M&Ms got my teens through the transition....most important read labels - every time. Label reading - like most things about removing gluten - become much easier with time. -

I buy mostly whole foods that are on sale and freeze bulk or family packs of meat. For gluten-free flours, baking mixes, pasta, astronaut food (baby food in squeeze packets) and supplements I use Amazon's Subscribe and Save -- if you have five items each month you get an additional 15% off. Also get huge bags of Cocoa Pebbles for my kids at Walmart... -
ARCHIVED Daughter's Labs Back
GottaSki replied to SMRI's topic in Parents, Friends and Loved Ones of Celiacs
Perhaps as your time gluten-free increases and she sees your health improve she will be more ready to give it a concerted try. My kids all decided on their own...couldn't force teens to remove gluten. Once they removed it on trial ... None were able to return to consumption. -

GottaSki replied to StephanieL's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I don't understand your point. Yes, lab ranges differ and there are wide ranges of normal. -
Yep the split in two thing failed...back then our economy was very strong and was something like 8th biggest economy when compared with other countries....that was before our state went broke I could live at elevation in Colorado : )

ARCHIVED Labs Completely Different From 2 Different Labs? One + One -
GottaSki replied to StephanieL's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Here is the problem..in my opinion. Many of us encounter lab inconsistencies, but we are not actively publishing our results. The results that are published with regard to celiac are performed in controlled settings of the best celiac centers in the world. In your situation, I would push for a third and if you have only run tTG....I would add the balance...
