  3. It's a bundt cake from the Cake Mix Doctor Bakes Gluten-Free and calls for a 15-oz box of gluten-free yellow cake mix (I used BC), . Can you have that or does it have soy in it?
  4. That would work for me!!! At least it would be a lot better than the sandwich I had last night on my inconsistent quality Udi's bread.
  5. Well, I did it! Shrimp scampi, brown rice (had a serving in the freezer) and fresh asparagus. Not bad for a spur-of-the-moment miracle. I really need to do better planning to get out of a boring rut. ETA: And a piece of chocolate chip cake later this evening.

  8. Tonight I'm having Ham & Bean soup made with ham and broth my dear DIL sent home with me after Easter dinner (also can add a stash of single servings for my freezer). And later tonight...a piece of leftover Flourless Chocolate Cake. Yum!

  10. I was just going to say "Bread" - specifically freshly-baked Multigrain Sandwich Bread (Annalise Roberts' recipe) . But then I decided I had better turn it into a ham sandwich and chips since it's getting late to eat here.

  12. Actually I used bread crumbs (from a loaf that bombed...lol). I was going to try your corn meal and will do so in the future. Leftover mashed potato sounds good, too (wonder if you could just use instant)?

  16. OMG, this sounds good. I can so relate to this meal from my childhood, too. I've been eyeing the can of salmon I have and wondered what to use for the "filler" part. I used to use saltines and figured I'd probably have to get some bread out of my freezer to use for crumbs or possibly use Rice Chex. Never would have thought of using corn meal.
  17. Last night I made a stir-fry using marinated beef, julienne carrot sticks, snow peas, onions and mushrooms served with rice. Yummy!
  18. Pizza!!! I already have enough leftover flour mix from last time so have a head start to make two crusts and freeze one (using a recipe from Gluten-Free Baking Classics). And a salad.
  19. Tonight I'm lazy and pulled out some Mexican Soup from the freezer. I just posted the recipe in the recipe section if anyone is interested in a no-brainer recipe. And a Lemon Lover's Cupcake with Lemon Buttercream Frosting (also pulled from the freezer).
  20. Well, since I couldn't make it to love2travel's house, I had oven fried chicken, baby red potatoes and a tossed salad plus a glass of Chardonnay. When you live alone, sometimes dinner is a miracle.

  22. Homemade chicken and rice soup pulled from my stash in the freezer. And I have a loaf of banana bread in the oven, which smells so good (made with my favorite Pamela's Baking & Pancake Mix).
  23. Reese's Peanut Butter Cups are my "go to" indulgence. I have no problem with them. I buy the regular size but have never tried the mini's.
  24. Chicken breast, Lundberg rice (Wild Blend) and fresh green beans.
  25. Pizza. I'm testing Annalise Roberts' recipe from Gluten-Free Baking Classics. Hope it turns out as I've had pretty good success with a couple of her gluten-free bread recipes.
