  1. It's a good idea to stick to whole foods when you're first diagnosed...you certainly don't have to read a lot of labels with strange ingredients for that. If you're wanting to make bread, now that get's into a whole new ballgame. Sandwich bread, for example, will be crumbly and fall apart without the addition of gums to try to replicate the elasticity...
  2. Gums are created in a lab. And when you really get into label reading, it's amazing that so many chemicals and unknown ingredients are added to processed foods. Hope you plan to do a lot of from-scratch cooking using only fresh ingredients!!!
  3. Both xanthan and guar gums are used in a lot of products, including some salad dressings and ice cream for example. We've probably been consuming them for years without really knowing what they are. I never read labels like I do now.
  4. I agree with Raven. The biopsies are sent to the lab for a pathologist to examine them so it takes a bit of time to get the results back.   6. No Juice Stop here but I wouldn't touch wheat grass or barley grass with a 10-foot pole. I think it's just too risky.
  7. Personally I like Open Original Shared Link including the moisturizer and eye cream. While it doesn't say gluten-free on it, I haven't had a problem with either one. And they're easy to find at drug stores and Wal-Mart.
  8. Welcome to the forum! Maltodextrin is a safe ingredient and is found in many foods. Open Original Shared Link When we're new to eating gluten-free, our bodies can be pretty wonky and we can seemingly react to most anything and everything.

    ARCHIVED Ultimate Flora?

    I bought some Ultra Flora (80 billion) after being on antibiotics this spring. I didn't have any problems with it nor do I know if it did anything for me. It was very expensive though from my local health food store.

  11. Glad you found out it is gluten-free, Miriam! In very rare instances (like an excruciating toothache with a scrip for an antibiotic and vicodin), I've also asked to see the printout of the meds to check the ingredients as I had just come from the dentist and needed something fast. Not my preferred way of doing it but I didn't have time for the pharmacist...

  22. Doesn't the Bready require you to use their own mixes? Interesting thought on adding yeast to banana bread or cornbread. Do you then have to let it rise like a regular yeast bread recipe? I'm all for high rises!!!
  23. When I first went gluten-free, I tried making a loaf of bread with my handheld mixer. I had a terrible time with it...the batter climbed the beaters and it didn't turn out very well. Some gluten-free bread recipes call for beating it on high for 3 or 4 minutes. I don't have that kind of stamina either. I also debated between buying a KA mixer or a bread...
  24. I've read your post, am diagnosed by positive celiac blood panel and positive biopsies but I don't have a freakin' clue what my genes are. I suspect there are others in the same position who've read your post. Likewise my adult daughter is also celiac and obviously got at least one of my genes but she has no clue what they are either. Nonetheless...
