  2. My fear as well.. I've had several friends in rehab centers within nursing homes and talked to the nurses there and they had no clue what would be gluten free or not on their menu. My last stay in the hospital after they brought me several meals with gluten containing bread, gravy, toast crumbs on the eggs. My doctor told them I would only be eating things...
  3. Unfortunately the Department of Defense has guidelines that don't allow people with Celiac Disease to join the military..   4. Good doctor I had a similar experience but opposite. My lab tests were negative (we figure now that I was too sick to eat much at the time) and my biopsy they were not able to get in far enough they said... so with symptoms and the appearance of my small intestine along with genetic testing I was diagnosed with Celiac. Gluten free for almost 8 yrs now...

    OMG I felt like you were talking about me in your post. I had one lesion back about 4 yrs ago after an MRI for severe sudden headaches.   8. Bad girl last night for supper... LOL Not gluten wise but FAT wise... I made buttermilk biscuits from my flour mix and sausage gravy.. OMG I haven't had biscuits and gravy for a year!!! It was fabulous... put that to the 'once in a while list' LOL Note: White Rice flour works very well for gravy!!

  10. I got my brand new waffle baker in the mail today so I made homemade gluten free waffles with my new flour mix I made up and they were wonderful!!! my non gluten free son loved them too. I will never buy frozen cardboard again!!! Sorry Van's but I only speak the truth LOL
  11. I've been making my own salad dressings and this one is so simple I had to share. Honey Mustard Dressing In a small glass bowl a squeeze of honey (approx 2 tsp?) a squeeze of dijon mustard (approx 2 tsp) a glug of olive oil (approx 2 tbsp) Mix with a small wire whisk a few seconds until it thickens...   12. Tonight I made: Lightly breaded chicken breasts (with homemade gluten-free bread crumbs of course), baked potato, fresh steamed asparagus with a light lemon sauce over the chicken and asparagus... YUM!!!!!!!!!!!!!!!!

Hodgson Mills gluten free pizza crust (yummy) I added a tsp of garlic powder and a tsp of oregano to the dough (a hint from a fellow shopper in the gluten free section) and topped it with mozzarella cheese, onions, peppers and mushrooms and a bit of parmesan. I sauteed some onions and fresh garlic in olive oil, added some sliced mushrooms, then a veggie mix I found in the freezer case (Broccoli, green beans sliced thin, carrot sticks, kidney beans, black beans and navy beans all in one) added about a cup or so of that and then some fresh spinach at the end...

No more eggrolls but I can still eat the rest!!! Yay! Support your local businesses they are more likely to take you seriously and provide gluten free options!...

I sauteed onions and mushrooms in olive oil, added some diced turkey breast and some turkey stock(leftovers from TG)thickened the juice with corn starch and then added some fresh spinach at the end.
