Hi, I have just recently been diagnosed and I have been gluten free since Sunday. I have two questions. Does anyone have a good substitute for bread crumbs to use in recipes? Meat loaf? Meat balls etc? Would ground flaxseed work? My 2nd question is. How long until it is out of my system. I have broken out in hives more since I have given up gluten. My nutritionist put me on a 3 week cleanse that cuts gluten, dairy, caffeine etc... and my body must be going through some serious withdrawls / detox but, the hives and itchies are unbearable. I'm trying not to take any benedryl because she said to stay away from anything over the counter but, it is getting worse. Any words of wisdom?

Gluten free breadcrumbs are available or you can make your own from gluten free bread. You could try flaxseed.

The worst of the withdrawal, etc., is often over in two weeks; you just have to stick with it because it is different for each person.

As for the hives and itching (new symptom apparently), this happened to me after going gluten free and I found out I was intolerant of soy, which is put in a lot of gluten-free foods, and you may well be eating soy if you have cut out dairy. I would look at what you have added to your diet since you eliminated gluten as being a potential culprit, something you are eating a lot of...that would be where I would start. Masking it won't help; you have to find out what it is. Keep a food diary and symptom diary and see if there is any correlation with what you are eating.

You can make gluten free bread, dry it, and then put it in the food processor to make your own.

I was just recently diagnosed as well and would love more information especially about the soy intolerance I found out today that I couldn't have one brand so far of soy milk I thought I was gonna die w/ the effects it had on me. I found that they make a breading that has corn meal and organic sugr haven't tried it thou I'm as far in as you. I've been gluten-free since Sunday as well.

I do fine with soy but, I prefer almond milk. I just prefer its taste if you don't have any nut allergies you should give it a try. You can find it anywhere they sell soy milk but, on the shelves not the refrigerated section. Are you as overwhelmed as I am??? I thought staying away from pasta and pizza was going to be tough enough but, gluten is everywhere.... and there is just too much information to take in... Although I am glad to finally have been diagnosed correctly and hope that there is an end to my health probs in the near future. Since you have it up on sunday is your body going haywire? I think alot of the reactions I am having are more about giving up caffeine and sugar (nutritionist has me doing a cleanse for 3 weeks) but, I am breaking out in hives at least once a day and I really haven't started eating anything new. I just cut thing out and I am eating alot of fresh fruit, nuts, and vegtables...

I have used leftover mashed potatoes and it worked pretty good for meatballs/meatloaf. I've even used dried potato flakes mixed with enough water to get the right texture, and it worked. Can't help with the hives - never get them.

This stood out in your post D Angel. I wondered if you are in the habit of consuming a lot of fruit prior to gluten free; could it be a fruit "overload" that is causing your hives? Or a particular fruit in large quantities? Just a thought.

I don't think so. I have always been a big fruit eater and always conscious that I got in all my servings of fruits and veggies in. And I haven't been eating any new fruits that I'm not already used to. Thanks tho :)

      Thanks for the update, Ben. If you will be having an endoscopy/biopsy to confirm the results of the blood testing - and this would be the normal protocol - you will still need to continue the gluten challenge until that is done.

      Update on how things went. To meet my daily quantity of gluten I had a measured amount of gluten flour with my breakfast and 2 slices of bread later in the day. I still had discomfort but it wasn't debilitating. My blood tests results came back this week and they were positive so I've been referred to a specialist.

      Hello, Ive been to the dermatologist ( two different ones) and now made appointment, soonest is NOVEMBER. Ive been dealing  with skin issues for a while and its getting  worse because nothing has worked.I feel the bumps, gently squeeze and a itty bitty hard thing is coming out.I took a picture and did close up and in the MANY pictures ive taken this past few days, there's a " string" type thing at the end. I FEEL IT COMING OUT.... At first few pic it looks like hair, its not.Its  part of what ever is in my skin...I did call my Dr yesterday and will be seeing him this Monday. What test should I request to see what the hell is causing my skin to have?I don't know what to call it.I do sleep with my indoor cats.I also have an inheritance cat two years ago who took to sleeping with me as well.I also was on topiramate but had to stop because of speech issues, memory and it can affect those with  kidney stones. I did suffer kidney stones in past.So i had to completely stop.Since freaking out of what i KNOW what I saw, i took matters in my own hands and decided to eat several whole cloves a day.Since doing so, though im not to eat garlic.My skin is actually clearing up sloooooooooowly.but then again I just started 4 days ago and already notice a difference. My husband thinks im seeing things.I know what I see and feel. what test is there to ask doctor about what is in my skin? Husband thinks im seeing things, because of the meningioma and stopping meds.i know what i saw.

      Vitamin A is important for vision health. But be careful in supplementing it as it can lead to toxicity. Research it and consult with your medical professional. I do not have a definite answer to your original question but I was pursuing the possible cause of nutritional deficiency. But your visual deterioration could be unrelated to your celiac disease so don't rule that out.

      Currently 19. Doctors think I was 1 year old when celiac started, but I wasn't diagnosed until 18, because they didn't do lab work on minors. I've been on a strict gluten-free diet for 14 months now. For example only certified gluten-free nuts and I've researched best brands a lot. I take B vitamins, vitamin D, vitamin C, Curcumin with black pepper, black sesame and green tea extract, magnesium, iron, and a little selenium and zinc, beef liver capsules. I recently had my vitamin and mineral levels retested and D is the only one I don't have enough of now. I had my eyes tested at 17 and they were good back then.
