  1. Ailish, welcome to this wonderful, informative website! Most everything you will ever want to know about celiac disease and the gluten free diet can be found by researching right here. I just want to say, that as a fairly new diagnosed celiac, I have had great results with the Gliadenx enzymes that are available from a vendor who advertises on this site...
  2. How hopeful! Wouldn't it be nice if eating a bagel was no longer just a fantasy. Thanks for posting this.
  3. Congratulations on your high antibodies to the covid spike protein! I am pretty sure this means you are very immune. It may mean that you have been recently reinfected at the subclinical level, and were asymptomatic, but that means the vaccine worked. Good for you for continuing to ware a mask. You can't eat gluten with a mask on!
  4. Does anyone eat products that say, "may contain traces of wheat," under the ingredient list? How about, "manufactured in a plant that also manufactures products containing wheat?" Are these different? I have eaten both on rare occaisions, with seemingly no I'll effects, but wonder if I am playing with fire.
  5. J. Morgan. Thank you so much for the update! I can tell by the tone of your post that you are quite relieved.
  6. Carolynh, thanks for the post! I too have been diagnosed with celiacs and silent reflux. I have tried all the medications, in various combinations, and not one helped a bit. My symptoms include a constant sensation of a lump in my throat, lots of phlegm, causing coughing and throat clearing, difficulty swallowing coarse dry foods, and frequent sensations...
  7. Thanks for the suggestions! All sound healthy and safe for just about everyone. The Melon salad would make a nice light desert, I am thinking.
  8. Hey, have you tried GlutenX, which is an enzyme that breaks down gluten in your stomach? I take one or two right before eating a potentially cross contaminated meal, or snack, and have never had an issue. As long as I stick to food that is gluten free, the whole world of going out to eat, and eating at friend's homes has opened up for me. As I understand...
  9. As usual, your wisdom is considerable! However, this article just struck me as too "us against them," or even smacking of tribalism, something the world DOES NOT need any more of. I know. This is not the place for politics, and I love that about this site. Sorry.
  10. Can't believe this topic was worthy of a PHD dissertation. Eat what you need to eat, don't eat what you can't, and shut up about it. Better yet, laugh along with everyone else. A good laugh is gluten free.
  11. First, congratulations on the poop! Just think of that as a possitve thing. Your young body is very capable of healing. The CNS is disturbing. However, there is not much you can do until you have some answers. In the mean time, the very best thing you can do is to take care of yourself. Get your body as strong as possible to allow optimum response to...
  12. What a hideous ordeal you have been through! As a retired RN, C-difficile comes to mind. This is severe persistent diarrhea that is only treated by antibiotics. A stool culture is needed for diagnosis. The prednisone can lower your immune response, and make you more susceptible to infections. C-diff diarrhea is often very explosive and watery, with a...
  13. Our local minor league stadium is finally letting us fully vacinated folks attend games unmasked. What fun! However. the last time I went to a game (pre-celiac diagnosis,) a cold beer and a hot dog was part of the deal. What to do? I ordered a gluten free canned cocktail, which was served in a big cup over ice. This was 90% as good as a beer! Next,...
  14. If it is candida, or oral thrush, your tongue/mouth situation can easily be treated with prescription nystatin swish and swallow mouth wash.
  15. Guest Laura, that struck me as so sad that you dislike eating food more everyday. Eating is supposed to be one of life's always dependable self gratifications. I admit that giving up all things gluten cuts into the fun, but there is so much yumminess still available. I don't hesitate to go out and eat. I just let the waiter know that I have Celiac's disease...
  16. Wow! What a story. Thank you so much for the detailed account you gave of your journey. May I ask how much, and what form of magnesium you took when you had covid?
  17. Just did some quick online research on transglutinase. Apparently, it is only in about .3% of the food we eat, and must be listed in the ingredients. Also, any food with transglutinase in it must be labeled "formed." The research on transglutinase and Celiac disease is not conclusive, but it is recommended that celiacs avoid it. I certainly will. One...
  18. Wow! Had no idea tacos could be gluten free! I am on my way!
  19. I was pleased that The Olive Garden has an acceptable gluten free menue. I had the chicken parmesan, which came broiled instead of fried. Rotini was the only gluten free pasta offered, but this came perfectly el dente, with a nice marana sauce on it. We asked that the "endless salad bowel" be served without croutons, which was delicious. Thank God, chilled...
  20. I can tell that would be delicious just by reading the recipe. We live full time in an RV, so have room only for a small food processor. I will try making it with that. Should work!
  21. Anyone ever think of cutting up gluten-free frozen waffles and using them for the crust of a chicken pot pie? I started with a simple white sauce made with corn starch, a little water and a little butter. I added a can of chicken with broth, a small can of mushrooms with juice and enough chicken flavored "Better Than Bullion," to make it taste nice and...
  22. As a newly diagnosed celiac, I am fairly appalled by the high cost and hideous taste of most baked goods. I did come up with a simple pie crust that, at least, does not distract from the enjoyment of a piece of pie. I made 1/2 of the bisquit recipe from the King Arthur's web sight, using King Arthur's Baking Mix. ( similar to good old Bisquik Mix.) I...
  23. On the AIG diet, were you ever able to add food groups back? I read a little about the diet on the internet, and it sounds like a good, but "burdensome," place to start for people who do not respond to a simple gluten free diet.
  24. Yeah Kind Bars! Widely available, not overly expensive, and truly delicious.
  25. Thanks for the concern. However, since my numbers seem to be dropping so nicely,I think I will continue what I am doing, and make stricter changes if the TTIGA does not continue to fall rapidly. My next test will be early July. My bloating, gas and large soft BM's are much more normal. I must be doing something right. I eat food that does not list any...
