Hi everyone that doesn't know me  :)

Last night I made Spaghetti , I put the homemade sauce over some nice purty purple potatoes , hubbs had his over noodles :) It was so good!! I just told him now this sauce isn't thick like your used to .... He said "Thank you!!" I think he is liking eating a lil healthier :) even thos he can eat Gluten! He is eating healthier because everything is fresh!! :)

Really is great when our family starts to see improvement themselves from our healthier diets.  Funny...even my kids are saying that they ate this or that at their friends homes or out and about and it just doesn't taste as good as it used to.

Welcome, 28in4dave!  Glad to have you here.  :)   I am definitely with you on the fresh thing.  I make nearly everything from scratch including BBQ sauces, ketchups, mustards, all sorts of preserves, sauces, pesto, etc.

 

Tonight we are grilling thick bone-in pork chops that I brined, olive oil-rubbed baked potatoes (with bay leaves and garlic in between the halves) and spicy Japanese cucumber salad.  Oh, and something with strawberries - I will probably make shortcakes.

Country Ribs from the butcher--done in a homemade BBQ sauce plus mango juice--also simmering slowly in there.Some cole slaw on the side.YUM

made gyros from buffalo bison meat and bacon, ate them on premade udi's pizza crust - yumzz :)

 

last night we 'lobster boiled' (with corn and potatoes) as celebration - only have the oldest and her hubs and adorable grand daughter once a year due to the USAF - so we splurged (or so it started out) i actually ended up with a deal after the fish counter guy over charged me.  i pointed out his mistake and he was so afraid of trying to get the live lobsters back out of the bag to re-weigh them, he charged me 2.99 per lb lolz i guess if you want to win at negotiating, take a lobster!!

 

tonight is special request shrimp picatta w/parslied potatoes and strawberry salad.  <grew the strawberries i am soooooo excited :D

 

ps - i think i got potato skins back - so far so good ;)

and a whoot! whoot! on the signing the loan docs :)

 

toddling off to refill the whine--- oh I mean wine -- ya it was that type of day

 

but i got a b%$@#in little chair raft when combined with my little rainbow unbrella makes an adorable image as a float in my salt water pool -- not...but I don't give a damn.

 

dinner was steak with zucchini and red onion served poolside by my personal cabana man-- sorry just can't picture hubs as cabana boy.

 

the men are off cycling "critical mass" -- hundreds of cyclists take over the city streets while I sit home and worry -- at least the son that recently decided he no longer needed a helmet...left with helmet in hand...I slipped him five bucks and said I am willing to bribe him to protect his melon... if he is stupid enough to not want to.  I'm sweet that way  :wub:

I ended up with too much sun yesterday, and fell asleep on the couch. Mr Mindwarp woke me up for chicken and rice.

I am starting a whole30 again today, but I have stayed pretty clean since my 1st one in January. So, no rice or white potatoes, and cutting down on nuts and dried fruit. The weight loss slowed, and I still have around 45lbs to go.

More sun today :) (maybe not too much though...)

Dinner tonight was Thai green curry. My 1st since gluten-free last September. It was divine. Been about 6 hours and so far so good....

In all the time I spend here, my husband has never noticed the bacon before. Last night he looks up and gets this "look" in his eyes and is like.... "I want dancing bacon" in the most pathetic adorable way. :lol:

 

I know it is unoriginal at this point and I probably sound like a broken record, but we're doing burgers tonight. I'm sure I'll think of something to have with them.

 

In exciting news, I went to the store Thursday night and wondered down a frozen aisle which never happens and noticed an entire shelf of Genius bread with a price label of $1.50. I grabbed my husband and was like, does that really say a buck and a half? I've seen people say this is good bread, but for all I'm spoiled in the city have never seen it before so I grabbed a loaf. I went back yesterday for 5 more. :D

I LOVE burgers( I admit it) and we had them tonight with asparagus on the grill. It's 93 dang degrees here.

There was more bread than I could count Thursday night. When I went back Friday afternoon there was maybe a dozen loaves left. The tag said close out sale so I am assuming that now that I found it and love it I will never buy any again. :( I suppose I should get over this because it is as nutritionally useless... where the bread I get at Costco has a veritable butt-ton of fiber. I just couldn't pass up such a good deal on bread that when I got it home tasted so much like.... BREAD!!!! (I have only had it as toast so that is the only opinion I have of it so far but omg I almost died when I popped that first piece.)

 

Anyway, to the reason I popped back in here. I was goofing off poking around yahoo a bit and found an absolute gem of a recipe that I just had to share. I think I just found the best ever summer BBQ recipe that will knock the socks off everyone invited. Bacon wrapped burgers. Not like I've seen before where they wrap a piece of bacon around the outside of a burger... no, this is serious business. Cut lengthwise to work better and basket weaved bacon wrapped burgers. I'm in love! :wub:

Still ridiculously and unseasonably hot here today (I like it, but everyone else is whining and complaining already...same people who harp on the snow and cold all winter...) and,

I am thinking chicken on the grill and a big salad wiith some nuts, goat cheese feta, mandarin slices, raspberry vinaigrette (pushing the envelope here with the vinegar, etc, I know...but I am not blown up like the michelin right now. I did however, spring spmething in my right hip that's got me

on ice this morning. Weird because it felt fine when I went to bed. I mean, I was asleep!...so how can I manage to hurt myself? sigh....  :lol:

Dinner tonight will be tri-tip with cauli-fried rice -- early so we can all go to the fancy movie theater on the son :)

 

IH come float with me....sis finally did yesterday -- the salt water system seems to be working...sure smells a heck of a lot better than the old chemical experiment pool.

I'm off to buy a few more chair rafts...amazing how much fun we can have with a simple little pool -- one bonus is it was perfect temp within a day -- whereas my friends with beautiful built in pools are waiting for the water to warm up -- if i ever do get the beautiful pool...me thinks I'll go shallow and solar -- although I love to dive and always wanted a 9' deep end :D

today is my oldest daughter, son-in-law and grand-daughter's last day here - they are afraid to cook in my kitchen so they have been eating take-out food for breakfast and lunch all week.   which works for them because they live in a little town in new mexico that has hardly anywhere to eat out lolz.

We use Bisquick for Waffles -- Hubs makes them -- I usually do not partake, but yesterday I ate one and it was delicious  :wub:

      I respectfully disagree, @Scott Adams.   Thiamine deficiency (and deficiencies in other B vitamins) can cause unintentional weight loss.  The body will use stored fat and muscle to provide energy in thiamine deficiency.  This results in muscle wasting, fat loss, fatigue, and difficulty putting on muscle mass.  Using stored fat and muscle for energy requires less thiamine than the amount of thiamine required to process carbohydrates.  Thiamine deficiency causes gastrointestinal Beriberi, a localized thiamine deficiency in the digestive tract, which results in dysbiosis, inflammation, and abdominal pain.  Carbohydrates can remain undigested in the intestinal system, which bacteria feed on, encouraging SIBO, and prompting dysbiosis, leaky gut, and inflammation.  Following a low carbohydrate Keto diet, like the AutoImmune Protocol diet, can help because it removes excess carbohydrates that the bacteria feed on.  SIBO can cause weight gain due to inflammational edema of the intestines (water retention in the tissues of the intestines), gas, and slowed transit times.  SIBO bacteria can absorb nutrients from your food before you can, resulting in additional deficiencies of other B vitamins and nutrients.   Thiamine deficiency is corrected with high dose Thiamine Hydrochloride, Benfotiamine and/or Thiamine TTFD (tetrahydrofurfuryl disulfide).  High dose thiamine in the form Benfotiamine has been shown to promote intestinal healing.  It improves "leaky gut".  High dose Benfotiamine will improve the gut microbiome in favor of beneficial bacteria.  Thiamine TTFD is beneficial for neurological issues.  Thiamine TTFD improves brain function and is beneficial for mental health issues such as depression and anxiety, and other neurological problems like Ataxia and Brain Fog.    Methylated (activated) B Complex vitamins help correct Thiamine deficiency because all eight B vitamins work together.  Vitamin C and the four fat soluble vitamins (A, D, E, and K) are needed as well.  Minerals like Magnesium, Calcium, Iron,  Potassium, and others may need to be supplemented as well.  Thiamine and Magnesium make life sustaining enzymes together.   Supplementing with high doses of Thiamine and other water soluble B vitamins will lower pain and inflammation, improve fatigue, improve muscle mass gain, as well as regulate the intestinal microbiome!  So, @Stegosaurus, you can get healthier while improving gut dysbiosis at the same time!       You may know this already, but in addition to what you've described, you may also want to get a genetic test. About 1/3 of people have one of the genetic markers that are necessary (but not sufficient) for getting celiac. If your son is one of the 2/3 of people that don't have the marker then it is almost certain he does not have celiac. (The genetic test won't tell you if he has celiac, it can only tell you whether or not he is susceptible to getting celiac.)

      That is really interesting, especially because it points to how the gut microbiome may still stay altered in celiac disease even after going gluten-free. The idea that a fiber like inulin could help feed beneficial bacteria and reduce inflammation is encouraging, although I imagine some people with celiac disease or other gut issues might still need to introduce it carefully depending on tolerance. It definitely feels like an area worth watching, because anything that could help support healing beyond just avoiding gluten would be valuable.

      @Irishgirl5, it does sound possible for those numbers to fluctuate a bit, especially when they are near the upper end of normal, but ongoing symptoms still make it understandable that you are concerned. The fact that his tissue transglutaminase immunoglobulin A is still technically in range does not always make the picture feel any clearer, especially with tummy pain, nausea, constipation, and diarrhea still going on. Anxiety can certainly add to gastrointestinal symptoms, but I can see why you would not want to assume that explains everything. It sounds like keeping an eye on things and being cautious with diet changes makes sense, especially if symptoms continue. Approximately 10x more people have non-celiac gluten sensitivity than have celiac disease, but there isn’t yet a test for NCGS. If your symptoms go away on a gluten-free diet it would likely signal NCGS.
