    Well the D stopped finally...I have dropped 7 pounds in the past few weeks. I now have multiple intolerance issues back....garlic, onions, tomatoes, lettuce, red pepper, bell pepper, chicken stock, egg yolks, are all off the menu and cause vomiting again . Back to sweet nut based porridge for a few more weeks.

    Amusingly my nerve damage is something else. Christmas day, I was taking stuff out of the oven without a mit/towel...handling hot pots etc....my mother pointed...

    So the 16th was my 28th birthday, I made myself some gluten free keto cinnamon rolls,...not quite up to par so I made a keto cake, Nice round birthday cake, extra moist and fluffy, cinnamon and egg nog extract in it.     This is a simple squash some from my mothers recipe, I personally make it with just chicken bone broth, and it is great on a cold day. Can be made with Vegtable Broth instead like Pacifics and no meat for a vegan version.

    So I saw a chiropractor today after noticing some nerve issues, neck pain and a spasm in my back. I talked them down on cost to a $35 xray and examination, and a $50 adjustment down from $257 and $65.     So considering a icecream machine for setting up at the market for awhile and doing catering, I tried a softserve machine and fell in love with the idea. But now after failing to raise the money for it and considering more issues with pros and cons I am opting to something a tad different. Biggest issues with the soft serve machine, the freezing cylinder has to have mix it to run properly, which leads to waste. And second it it limited to 1 flavor at a time in large batches...

    Recovered fully from having the surgery removing my appendix in 12 days...literally back to lifting weights (no more then 40lbs for the first month is my personal set limit)....day 1 after I was back to 10 miles a day on a under desk elliptical...but I go crazy if not moving.

    This Virus has shut down the farmers markets, and only had 1 order in the past month, so paying bills is not possible via normal methods.....I am cooking meals for my landlord daily to pay rent...

    So today I started some experimenting, I used what I learned from my protein sticky dough experiment about psyliumm husk gelling with warm liquids and applying it with a gluten free flour mixture (almond/coconut/Swerve/guar gum )then taking the hot mix and cooling then adding in the eggs and baking powder akin to a choux pastry dough I can get amazing rise and super puffy results.     So needing to find a keto brownie that would be easy to digest I found a recipe and modified it to fit my needs. These are best served hot so leftovers are best heated before serving.
    By the way if you have a icing or some chocolate syrup I would suggest serving it drizzles over these it adds a wonderful touch.

    So my health is quite bad, the GI upset has leveled out after 4 weeks the bleeding stopped with vitamin K and calcium enriched almond milk daily to encourage clotting. My diet has been mostly meat, vegan cheese, collagen and almond milk drinks, and snacking on pork rinds. I recent introduced some almond yogurt to try and populate my gut bacteria and kale for vitamins.     Secret Sauce

    So each place has it's own secret sauce, this is the one I use for burgers and dips.
    You can use more mayo instead of yogurt for a better spread for burgers.
    1/2 cup (120g) Mayo (I use Primal Kitchen)

    These are bit more crumbly sugar cookie knock off, the coconut flour makes them super inexpensive to make and it makes a large amount. Will post a higher grade one that is more for decorating with icing later.

    So I got a good deal at a restaurant auction for a prep center brand new at 1/30th retail. Seems the manufacturer of the custom unit forgot something looking at design notes....it was supposed to be modular to fit in a building. Well it is one solid 97"x48" stainless unit welded to a steel frame, which requires removing my door, removing the door frame, and using a engine hoist from the machine shop next door and 4 guys to to get in on its side.

    Monte Cristo Knock off
    This is not the Cheddar's Monte Cristo from my childhood, I could make one more like it but I can not justify spending $30 in initial products.

    I was going to make hamburger Salad but recalled a mini burger receipe from a cook book I got from ketosummit. Modified slightly and made 2 regular size buns in 2 cup glass dishes.
