  1. Hi Everyone! I was dx'ed with celiac 1 year ago and gave up milk and soy in addition to gluten. Soy gave me a similar reaction as gluten would, however on a much smaller scale. I still have moderate amounts of soy (soy lection etc.) but I am now ready to try adding soy back into my diet. What is the best way to "test" my body to see how it reacts to soy? I vaguely remember someone saying you need to consume 4 times the amount you ordinarily would in one sitting (as in 4 cups of soy milk) but that seems extreme. Thank you in advance for any ideas/suggestions! -Dana

    hey! I was in both places a few weeks ago. Prague has a store everywhere called DM a health food/drug store type place that carries a whole range of gluten-free food. Breads, pastas etc. In italy all gluten-free food is in pharmacys which are everywhere. They have tons of gluten-free food choices, way better than the US! I have been to 14 countries in Europe in the past 5 months and I have to say that I have never had better gluten-free food! I don't tend to eat a lot of breads and pastas but stuck to lots of trail mixes, fruits, salads etc. Just bring a restuarant card and you will be fine!   9. hi- the labels don't list any gluten products, and neither label says anything about manufacturing process involving wheat, so i figured they were both ok. It seems like Im starting to have a reaction though.

    OK, I will avoid soy completely! Wow, i would love to try and make my own almond milk! I don't have very much time to cook now (i'm a college student) Do you know of any brands that are gluten/casien/soy free? thanks!
  14. Hi! I have been gluten free since June but I am still not feeling better! I eliminated casein, and i think that helped some, but I have come to think that I must have other intolerances/allergies. I had a scratch test about 5 months ago and I came back positive on many different foods, but I understand that does not necessary mean I am allergic, and that now it is all about threshold testing. I think that I am allergic to soy because I feel sick after I eat something that has soy cheese or another type of soy in it. However, I cannot tell if it is just a self-fulfilling prophecy now because I never feel well, so after I eat something and feel sick I "blame" what I just ate. How can you tell if you are really allergic to something? I have been avoiding soy for a while, but I just found out that the almond milk that I make lattes with every morning has soy lection in it. Is that trivial amount of soy enough to make someone with a "minor" soy allergy sick? I just want to feel better Thank you! -Dana
