I'm a homeschooling mom of four children. We live in the Laurel Highlands of PA. My daughter has celiac disease and my son has gluten intolerance.
We also have a whole grain gluten-free baking mix business, selling at our local farmer's market and online. Our baking mix business had become pretty popular locally when we learned about the celiac disease. For the health of the children, it was go out of business or switch the business over to gluten-free. We learned a lot about cross contamination, and turned our household and business over to gluten-free. We perform regular ELISA testing on all our products and they always tests negative to 10 ppm.
Our teenage daughter was pretty bad with intestinal damage as well as some neurological damage when the doctors figured out what was wrong, but her intestines are healed now. We are still adjusting to the diet, but celebrate each new gluten-free food we can make that's really good.
