Omg...i Might Be On To Something

I remember reading that someone should be off antibiotics for at least 2 weeks before testing.

I dont know if it depends on the type of antibiotics taken. Antibiotics suppress the immune system....so if you're taking antibiotics that have no affect on Lyme but are weakening your immune system....maybe that could have a negative affect on testing??? An LLMD would know alot more than I could begin to guess about this. :unsure:

Laura, glad to know your doctor is thorough and is taking the Lyme indications on your test seriously.

Physically I am in less pain, just slightly, but am still feeling flattened emotionally, just no energy. I was thinking about what you had said Rachel, about emoticons and it does seem true that when I am down I just don't use them much. <_<:)

Christmas is a very low key event around here but I will tell you that I have some happy Lyme bugs after indulging in too many spicy pecans. They are roasted with kahlua, maple syrup and chimayo chili powder on them and were supposed to be gifts but they have mostly disappeared. :ph34r: Oh and they taste really good with chocolate chips. :o

Ha, I'm with you in the happy bug category then, lol. I made it grocery shopping this morning and saw that there were two gluten-free pumpkin pies, a larger one and a smaller one. I miss pumpkin pie at Thanksgiving and Christmas so I was very happy. I picked up the larger one first, read the ingredients, which sent me to heavan cuz it was gluten, casein and soy free! But, it was so large...I decided to get the smaller one. Well, stupid me, the smaller one was completely different and was gluten-free but has dairy in it. Grrr. I decided to have a bite of it, but I'm afraid to have more. I may go back tomorrow and get the bigger one even if I end up throwing most of it out, lol.

Donna,

Buy the larger one, leave out (and enjoy!) as much as you want--and then freeze the rest! If you freeze it in individual wedges, you will have dessert anytime you want! :D

Great, I wasn't sure if pumpkin pie freeze well...that will also keep me from eating the whole thing at once. (I have a secret Rachel-like habit of racheling food, lol)

I'm mostly too scared to indulge in goodies. :ph34r: My mom has all these treats out right now....she bought tons of holiday snacks and chocolates, candies...cookies, etc. I looked at all the stuff....then looked at her like this <_< .

She said she doesnt worry about me eating anything because she feels that I have alot of will power....and I dont ever "cheat". I dont know if its willpower or fear that keeps me from indulging....but whichever it is...it works. However, I do tend to stare at the foods quite a bit. :lol:

I pray that next Xmas there will be alot less staring and alot more indulging! :P

About the emoticons. Yeah....I use sooo many of them when I feel good....but other times not so much. If I'm feeling down there are alot of these guys in my posts :(:(:angry::angry:

The only food I'm really sad about not eating during the holidays is pumpkin pie....with whip cream. The thought of not having pumpkin pie actually has brought tears to my eyes. :rolleyes:

So last year (Thanksgiving) they had one type of gluten-free pumpkin pie...it was some kind of vegan pumpkin pie. I wasnt too sure how good a "vegan" pumpkin pie would be but I ended up not getting it because it wasnt made in a dedicated facility. This was when I *thought* I could eat anything...so long as it was gluten-free. :lol::lol: Boy was I wrong about that! :rolleyes:

I remember wishing that the WF gluten-free Bakehouse made a pumpkin pie.....or Crave Bakery....which makes their deserts both gluten and dairy free. Neither of them had a pumpkin pie last year though. I ended up getting corn bread from the gluten-free bakehouse and a chocolate cake from Crave Bakery. I also ended up massively swollen the next day. :ph34r:

So this year I said screw it....if I can find a pumpkin pie....I'm getting it!!

I already tested out a small portion of whip cream....but it was a no-go. My pie will have to be w/out topping. :(

I searched for a pie a few days ago and they had a Crave Bakery pumpkin pie!! OMG...I thought I might die. THEN....I saw the price.... :o OMG....it was a small pie for $18.00. :blink:

I was still gonna buy it...but as I was inspecting them (trying to get the BEST one) I spotted MOLD!!! :o

I was NOT gonna risk it after that....talk about fear...well that pretty much snapped me out of my fantasy thoughts of pumpkin pie indulgence....at least for THAT shopping trip. <_<

It was a bummer cuz Crave Bakery uses organic ingredients. :(

So tonight I go back....those pies are all gone...hopefully they got thrown out and not bought....although I'm thinking only extremely desperate people would spend nearly $20 on the small pie. Yes....I was one of those desperate people. :ph34r:

I looked for more pies. They had the vegan pie but the first one I picked up had mold on it too!! WTH???

Then I looked in the freezer where they have the gluten-free Bakehouse stuff. They had a PUMPKIN PIE this year!!! There was only 2....they're really small....$10....and have alot of other bad stuff in them....plus they arent organic. I bought one anyways...like I said....screw it...I'm having some pumpkin pie this year! :D

The Cupertino WF doesnt freeze their gluten-free foods....whereas the new store does. I kind of was turned off by the stuff being frozen....but then I thought...less chance of mold maybe??? Please tell me frozen stuff wont get mold. :unsure:

So yeah....I guess you can freeze pumpkin pie. B)

Oh...the whole "mold" thing got me thinking. I checked out the regular "forbidden" pumpkin pies and didnt notice mold on any of them. <_<

I recall many months ago some of us were pondering why we actually felt worse eating the gluten-free "goodies". Could it be because the gluten-free stuff usually contains more natural or healthy ingredients...hence the lack of preservatives??? Could gluten-free foods have a shorter shelf life and greater amounts of MOLDS??? :unsure:

Now that I've found out how "nicely" my body responds to molds...I'm a little freaked out when I see it. I bought some potatoes the other day....and they have mold on them. <_<

Went back today and the whole freakin potato display was moldy. I never even KNEW that mold grew on potatoes!! Is there nothing in this world thats safe for me....besides my hot ice cream?? :blink:

Rachel, I wonder if the early stage of mold sensitivity is to notice it when nobody else would? That would certainly be me--I notice the taste of it in fruit (and I wash fruit VERY well) and breads when nobody else, not even my kids do. And I notice the smell of mold or mildew (like in the washing machine if I forget to transfer a load of laundry to the dryer in a timely fashion!) when nobody else does, too/ For a while, I thought I was nuts, but then when I didn't throw things out that smell like mold ONLY to me, within 24 hours, you can SEE the mold on it. So now I throw them out, and DH has stopped raising his eyebrows. And nuts and oils that have gone rancid--same thing!

Yesterday, I was at the grocery store, looking at premade dips--and they had all expired in October and November--YECCCH! I was SO glad the produce manager happened to be there--I was not quiet about saying, "Oh, this REALLY inspires confidence!"

I've actually never liked pumpkin pie--but it is ridiculously easy to make. Couldn't you make one? But what would you substitute for the condensed milk? What does Crave Bakery use?

I'm curious--now that you have been off so many offending foods for so long, do cakes actually still TASTE good to you?

I made my own pumpkin pie last thanksgiving. I actually don't have much of a sweet tooth the only desesrt I really like is ice cream. But I made the pumpkin pie to be soy and dairy free (obviosly gluten free as well) It was pretty good I think I only made it becaus eI wanted to be eating something everyone else was eating. I don't really get tempted by what everyone else is eating I just wish the food I ate left me more comfortable. I still have to decide what I am going to make for tomorrow . We do a big breakfast and than and early lunch/dinner thing. So I have to do some planning. God I miss not having to worry about things like this.

The holidays are really bringing me down this year. I think partially becasue it is the time of year I started to get sick. Not an anniversary I really care to celebrate. I just kind of cannot wait for the holidays to be over and I hate that I feel that way becasue before I got sick I aways loved the holidays

Just so you know....the ticks (or mosquitos) that carry Lyme....they don't recognize "borders". They can travel anywhere. They wouldnt just *stay* in one city.....or one state....or one country. They can travel on pets, on people, on rodents, etc. Lyme is the fastest spreading infectious disease after AIDS....its pretty much everywhere now.

This is so scary and how hard it is to diagnose just makes it that much more so. Tueaday I ahve a doctors appt - I think some of my test results are in . Definitly the c6 peptide one- although I still feel unsure of the acuuracy of it. Of course now I am looking forward to tuesday (test results) rather than monday (x-mas)- what a weird life I lead!!

:lol::lol::lol: Yep it was Whole Foods. The small one I got was the WF Gluten-Free Bakehosue, hence the bad stuff in it, lol. Actually the ingredients didn't look too bad except the first ingredient is butter, then farther down the list is milk and condensed milk. I ate a very small bite of it, and it was heavenly, but I don't want to risk a bigger piece since I KNOW I can't eat dairy, lol.

I can't remember who made the other pie, but it was larger and I think it was actually a "tort" or something...looked like a pumpkin pie to me with straight up and down sides instead of the usual pie slope. :lol: I'm thinking of trying to go in early this morning to see if it's still there and get one.

Neither pie was in the freezer. :(

I've actually noticed mold on some stuff too, although I must admit, on this pie I didn't even check the expiration date until I got home. :lol: And, I still don't know how much it actually cost, lol. :lol:

I wonder what type of cream your ice cream uses...if you could find that cream by itself maybe you could make your own whipped cream?

You are getting closer to a firm diagnosis. Lyme just sounds so plausible with your test results even though they were't strong positive.

Hugs.....next year will be a year of more answers and starting down the road to recovery. :)

Speaking of pumpkin pies, I just made one :D

I used the GFP pie crust mix using Spectrum shortening, and followed the Libby pumpkin pie recipe on the can. I substituted Vance's Dari Free for the evaporated milk. This way, it's gluten, dairy, soy, and tapioca free! :lol:

I did the same thing for Thanksgiving, and it was delicious!

Now, I will go back to catching up.... I think this was my first drive by :lol:

Christmas day I plan to make pumpkin custard, we like it real well and hubby does not need the calories. The family fixed him up with enough goodies to last awhile. I mix the ingredients to gether up to milk, then I take 1/2 out and use cocnut milk for mine & canned milk for his. Seems real good. I do eat a tiny bit of topping, maybe should not but cna't seem to find what is setting off my D. Better today, my christmas present maybe. We had such a beautiful morning today with frost on ground and everything. Hope you all have a wonderful day Monday!! :):)

Just want to say Merry Christmas (or happy holidays in general) to everyone here- too many to name!! You guys have become like a second family over this year. Sorry Andrea (definitly the mom) I don't know if you intended on adopting so many children!!! I hope everyone has a great day and has lots of good news to report tomorrow

Looking forward to hearing about your appointment tomorrow.

My son and daughter in law got me some sudoku books! I was surprised....they figured I would like something like that. We had a good day yesterday visiting with all the boys. One of them brought his girlfriend whom we didn't know was coming, so we didn't have a gift for her. It was prearranged for everyone to leave between 7-8 except for the late arriving son/dil so we'd have some time to visit with them. All the other boys tend to monopolize his time, although they are getting better. :) One of the boys monopolizes his Dad's time so he doesn't get as much of a chance to visit with the others. Very late night last night for the kids. I think it was around 10 that we got them down.

Off for another day of gifts and talking to family that isn't in the area.

Hope everyone has had a great holiday weekend. :D

I hope you all had a great day! :D Ours was really nice--quiet, just the 2 boys and my older son's girlfriend. The dinner turned out well, and I just finished my second piece of pumpkin pie :ph34r: Hope I won't be sorry--but it was so good!

I just popped on quick--I was thinking of you guys, and wanted to check in. :)
